Soba Natto Bean Salad with Umeboshi Plum Dressing
I’ve been a member of our local YMCA since we moved here about a year and half ago.
But my workout has never been really consistent, and a few weeks ago I decided that I wanted to change that.
I went to buy new workout outfit and an iPhone arm band; yes, these things help motivate me and I’ll take advantage of anything that does!
Yesterday we had a beautiful cool afternoon, and I decided to go for a run.
I was able to run longer a little more than I usually do. It was not much, but still a progress, and I take it.
This soba salad was my after-a-run meal yesterday.
Very refreshing and satisfying!
100g cooked soba
1 package natto beans (Japanese fermented soy beans)
2 radishes, chopped
1/3 cup radish sprouts
1/2 cup spinach leaves
pickled red onion
green onion, chopped
plum dressing
– 1 tablespoon soy sauce
– 1 tablespoon vinegar
– 1 tablespoon canola oil
– 1 tablespoon sugar
– 1 umebosi (Japanese salted plum), chopped
– salt
1. Make dressing. Combine all the ingredients.
2. Place soba, natto, and the vegetables in a bow. Serve with the plum dressing.
蕎麦と納豆のサラダ、梅ドレッシング
最近もうちょっと真面目に運動を始めました。
ちょろちょろとやってはいたものの一週間ほどまったく運動しない時があったり、運動しても20分弱だらだらやって終わり、だったり。
で、先日、友達とショッピングに出かけた時にいい機会と思って、運動用の服を数枚購入。
そして、このところ欲しいと思っていた、iPhone(携帯)用の腕バンドもゲット。
何でも形から入る私ですが、コレが実は効くものですね(笑)。
新しいショーツとスポーツブラ・ランニングシャツを着て、そして、iPhoneを腕につけて音楽を聞きながら、昨日はジョギングに出かけましたが、
いつもと違っていい感じ。気分がちょっと盛り上がります。
(本当はこの効果で、いつもより長めに走れるかな、と思ったのは間違い(苦笑)。前回に比べたら距離的に伸びたのはほんのちょびっと。まあそれでも上達なのですけどね。)
で、金曜日の午後に走った後のご飯がコレ。
さっぱり食べたかったのと、納豆がどうしても食べたかったので、こんな蕎麦納豆サラダ。
冷蔵庫にあったもの全部使ってみました。
ドレッシングは、最近日本食料品店で買った梅干しを使って梅ドレッシング。
夏は梅干しが使えますね~。
今週はなんだか急にクールダウン。
昨日は秋みたいな一日でした。
涼しくっていいのですが、もうすぐ秋に突入、そしたら、なが~い冬がやってくるかと思うと、暑くってもいいから、もうちょっと夏が続いてくれないかな、と願います。

Looks so yummy and great recipe for summer though, I live in Brisbane, Australia. I would love to try this soon. Also it is great idea to write blog post both in English and Japanese. Cheers Reiko san

Thank you for your comment! I’ve never been to Briabane, but I hear it’s a beautiful city! I write in English and Japanese both, mostly to let my parents in Japan know how we are doing, but also not to forget how to write in Japanese (lol).
