Mojito Cake
Mojito is so refreshing on a hot summer day.
I wanted to re-create this wonderful flavor combination in this cake and I think I succeeded!
Lime, mint, and rum.
How could this go wrong, right?
3/4 cup all-purpose flour
1 teaspoons baking powder
1/4 teaspoon salt
1/2 cup sour cream
1/2 cup and 2 tablespoons sugar, divided
1.5 large eggs
grated lime zest from 1 lime
10 mint leaves, roughly chopped
1/4 teaspoon rum
1/4 cup canola oil
1 tablespoon freshly squeezed lime juice
1 tablespoon rum
lime yogurt (optional)
– 1/2 cup Greek yogurt
– 1 teaspoon sugar
– lime juice from 1/4 lime
1. Preheat oven to 350 degrees F. Grease a pan with butter.
2. Combine together the flour, baking powder, and salt in a bowl. In another bowl, combine together the yogurt, 1/2 cup sugar, the eggs, lime zest, mint leaves, rum, and oil. Puree the mint leaves using a hand blender. Add the dry ingredients to the wet ingredients, making sure it’s all incorporated. Pour the batter into the prepared pan. Bake for about 40~45 minutes, or until a cake tester comes out clean.
3. Cook the 1 tablespoon of lime juice, 1 tablespoon of rum, and remaining 2 tablespoons of sugar in a small pan until the sugar dissolves.
4. While the cake is still warm, pour the syrup over the cake and allow it to soak in. Cool.
5. (Optional; serve with lime yogurt) Make lime yogurt. Combine yogurt, sugar, and lime juice.
モヒートケーキ
モヒート、というのは、ライム、ミントの葉、ラム酒が主役のカクテルです。
ライムも果汁だけではなくざくざくっと切ったものをそのまま、ミントの葉もぽんぽん、と入れたら、砂糖と一緒にぐしゅぐしゅっとマドラーで潰す感じに味を出します。
そこに、クラブソーダとラム酒を入れて仕上げ。
もう何年も昔のことですが、初めて口にしたときは、ショックだったぐらい美味しかったのを覚えています。
材料から分かるように、とっても爽やか。
暑～い夏の日にぴったりです。
なのですが、今回は、モヒートケーキの紹介。
モヒートカクテルの材料の組み合わせをそのままアイデアに、ケーキにしたもの。
ライムの皮、フレッシュなミントの葉、ラム酒を入れて焼き、焼きあがったまだ温かいうちに、ライム果汁とラム酒のシロップをたっぷりとしみこませてます。
そのままでもしっとり美味しいケーキですが、ライム果汁を少し入れた甘さ控えめなギリシャヨーグルトと一緒に食べるとこれまたイケます。
二人だけだし、甘いものは控えているので、小さい型で作ったら、あっという間になくなりました～。

モヒートのケーキ？！美味しそう〜
こんな爽やかなレモンケーキ、最近急に食べたくなります。でも作れません笑
こんなキレイなケーキが出てきたら、その日で食べ切りますよぉ！

今、生後8ヶ月の男の子がいます。
ちょっと前の記事の、甥っ子ちゃんって、もしかしてあの双子ちゃんですか？もう7歳というのに衝撃を受けてしまいました∑(ﾟДﾟ)
