Breakfast Taco Rice
Breakfast October 3, 2009

This has been one of our favorite weekend breakfast dishes recently. A funny thing is I never intended to make anything like this… A few weeks ago, I was thinking about making breakfast tacos, but the tortillas in the freezer were rather old and I decided not to use them. I had my mind set on breakfast tacos, and I came up with this breakfast taco rice. I piled up all the stuff, such as eggs, vegetables, taco sauce, and cheese, which was originally supposed to be wrapped in tortillas, on top of rice.

Breakfast Taco Rice: cilantro rice (rice, chopped cilantro, salt, pepper), egg with green pepper and onion, ground turkey, grape tomatoes, green onion, cheese, taco sauce

Breakfast Parfait
September 27, 2009

An easy and healthy breakfast parfait. Plain yogurt, black plum slices, strawberry coulis (made with strawberry, sugar, and lemon juice), and some kind of crunchy cereal(?) were layered in a small glass. You can use any fruits, fruit sauce, or cereal to make your own parfait.

Orange Cream Stuffed Crepes with Strawberry Coulis
September 7, 2009

Lots of orange zest was mixed with cream cheese and sugar. The cream cheese mixture was stuffed in crepes and served with strawberry coulis. Easy, but fresh and tasty.

Breakfast Crepes

Breakfast Crepes
Breakfast, September 6, 2009

Inside the crepe are an egg, ham, and cheese. I used Julia Child’s recipe in the book, “Mastering the Art of French Cooking”, to make these crepes. Her recipe was fantastic! I love the texture, and it tasted great! I could have just eaten the plain crepes without anything with them. They were that good.

I’m glad that I got this book. I had to have it when I saw the movie, “Julie and Julia“. But of course there must have been a million of others who saw the movie and thought the same thing. I had to wait for several weeks before Amazon could get a copy for me, but I think it was worth the wait.

Peanut Butter and Banana French Toast
Brunch August 28, 2009

When I was watching Food Network the other day, they had an interesting show in which popular chefs were revealing their favorite restaurant dishes. I saw Bobby Flay talking about his favorite peanut butter and banana french toast that he orders at some restaurant, and it looked very good. Last weekend I decide to try making something similar. I added cream cheese to the filling (peanut butter and banana), as I always like the combination of peanut butter and cream cheese.

Corn and Tomato Tart

Corn and Tomato Tart
Brunch August 15, 2009

A wonderful way to enjoy sweet corn. I used store-bought pie sheet, so this was very easy to make. Once I baked the pie, I added corn custard mixture, and placed a few tomato slices on top. I cooked it in a bain-marie so that the corn custard was cooked nice and creamy. Once the custard was cooked through, I turned on the broiler to cook the tomatoes for a few minutes. Corn was so sweet and the tomato added a nice fresh taste. I was going to take the tart out of the mold, but I was so afraid of breaking the tart before taking pictures…
