Vegan “Meat” Balls
This is one of my favorite vegan “meat” ball recipes.
I like the texture that is not “bean-y”.
The outside is nice and crunchy and the inside is juicy and moist.
I listed the basic recipe below, but I usually like to add different things, such as ginger, chopped edamame, green onion, mushrooms, etc.
2 cloves garlic, chopped
1 small onion, chopped
1 package (12oz) extra firm tofu, microwaved to remove excess water and then mashed
2 potatoes, grated
1/2 cup cooked quinoa
3~6 tablespoon flour
sugar
salt and pepperflour for dusting
canola oil for cooking
1. Combine all the ingredients. Form small balls.
2. Dust the balls with flour.
3. Cook the “meat” balls in canola oil.
肉ナシ“ミート”ボール
ナニかというと、肉で作ったんじゃないミートボールです(笑)。
もともとは小林カツ代さんのアイデアをちょこっといただいてますが、申し訳ないぐらい材料も作り方も変えてあるので、ほとんどオリジナルです。
アメリカでは、肉でない(ヴィーガン)“ミートボール”系は、豆をつぶして作ったものが多いのですが、私はあのなんともへなちょこな食感が気に入らないんですよね。
このレシピは、豆腐、すりおろしたジャガイモ、キノアが基本材料なので、柔らかくジューシーだけれど、なかなかいい感じの食感に出来上がります。
シンプルレシピも美味しいですが、使う料理によっては、生姜や醤油で和風味にしたり、きのこや枝豆を入れて食感を変えてみたり、といろいろアレンジするのも楽しいですよ。
先日パワーボールというアメリカの宝くじ、賞金一等が8億ドル(約800億円? 普段は簡単に計算できるのだけれど、こんな大金を計算したことないのでちょっと自信が。。。(苦笑))だったんですよね。
早速テリーと二人で二枚買いました。
当たらなかったのですが、ちょこっとだけ夢を見させてもらいました(笑)。
それにしても、当たったら、“ギターレッスンを受ける”、とすぐさま答えた私は貧乏性でしょうか(今でもギターレッスン本当に受けたければ受けれるお金はあるんですよ。母心配しないでね(苦笑))。
結局一等当たりが出なかったとのことで、現在賞金はさらにあがって、13億ドル(約1300億円だね)。
ここまでくると、当たったらナニ買う?、という会話さえも成立しなくなるわ~。
