Veggie Spaghetti with Creamy Chili Lime Peanut Sauce

I love pasta.

Or should I say I like noodle.

Because if I have a choice, I almost always pick long pasta/noodle vs. short pasta.

If I want to eat pasta, I want be able to twirl it around the fork.

And I like to say “spaghetti” anyway.

I don’t know what it is, but the word just sounds so good and always makes me smile.

This spaghetti bowl is absolutely delicious!!

The creamy peanut sauce is quite rich but the fresh herbs and vegetables really brighten and lighten up the flavors.

Veggie Spaghetti with Creamy Chili Lime Peanut Sauce

chili lime peanut sauce
– 2 tablespoons creamy peanut butter
– 1 tablespoon soy sauce
– 1/2 tablespoon sugar
– fresh lime juice
– crushed red chili pepper
– salt and pepper
100g spaghetti, cooked
1/2 carrot, julienned and lightly salted
1/4 cup sugar snap peas, cooked
1/4 cup red cabbage (quickly pickled in a mixture of salt, sugar, vinegar)
1/4 cup cucumber, julienned and lightly salted
cilantro, chopped
mint, chopped

1. Make chili lime peanut sauce. Combine all the ingredients.
2. Toss the cooked spaghetti with the sauce.
3. Serve the pasta with all the vegetables, cilantro, and mint.

長～い名前になりました。

本当はミントがアクセントの、とか、野菜たっぷり、とか、も言いたかったんだけれど、さすがに長くなりすぎるのでやめました。

最近はこういうご飯が大好きです。

野菜たっぷり。

炭水化物（ごはんや麺）に対して倍以上の野菜でお皿を埋めるのが楽しくってしょうがありません。

このピーナッツバターで作るソースはアジアンな味付けで大好きなソースの一つ。

クリーミーな出来上がりで、ねっとり麺に絡むのですが、そこをチリでぴりっと引き締め、さらに、ライムとミントでさっぱり仕上げるというのがコツであります。

野菜も、生そのままではなくって、紫キャベツは甘酢漬け、人参はナムル風に、と下味を少しつけるのもポイントかな。

ちなみに、この器、気に入って即買いしたものの、うちに帰ってすぐに、やっぱり返品しようかな、と迷ったもの。

でも実はこれ、とっても使いやすくて気に入ってます。

盛りやすい、写真に撮りやすい、というところがポイント高し。
