  • These look good and I’d like to try them. I’m curious as to cooking the tofu first, do you do this because it alters the texture? Also are the shredded potatoes raw? What size shred? Like pre-shredded Cheddar cheese from the grocery store or did you use the small holes like you might for grating lemon peel. I look forward to try them since for us, beef burgers might taste good going down, but then they sit there like a boulder!

    Hi Lori,
    We often pre-cook tofu this way in order to take extra water out of the tofu and let the tofu absorb sauce/soup better. It also helps the tofu keep its firm texture. I shredded “raw” potatoes. It’s between the pre-shredded Cheddar cheese and lemon peel. But probably closer to the lemon grater. I just made a teriyaki burger with this patty for lunch yesterday and it was very good. 🙂
