Black Bean Mango Picadillo

Latin American influenced dishes continue here. Here is my vegan version of picadillo. Golden raisins and green olives are a must. We enjoyed this over brown rice.

ブラックビーンとマンゴーのピカディーヨ

これまたラテンアメリカの料理です。

普通は牛ひき肉をトマトやスパイスで味付けしたもの。

我が家はもちろん肉なしバージョンです。

主材料はブラックビーンとマンゴー。

そのほかには、にんにく、玉ねぎ、コーン。

肉を入れないので、味に奥行を出すため、ちょっとクセのあるグリーンオリーブとゴールデンレーズンを入れたのが大当たり！

味付けはトマト、クミン、シナモン、ホットソース、香菜などなど。

テリーにもとっても好評。

ブラウンライスにたっぷりかけていただきました～。
