I introduced you to a Kabocha pumpkin dish the other day, but this is another thing I made using the same Kabocha.
Kabocha becomes so creamy and sweet when cooked, and this is perfect to use to make potage or creamy soup.
This was served with homemade large croutons.
Last weekend when we were checking out a new Co-op grocery store near our house, I found Kabocha there too.
I was so excited especially because theirs are organic AND produced in Wisconsin!
(It’s a state next to us, but close enough to call it “local”.)
I will definitely go back to get some of those local Kabocha soon.
canola oil
1 clove garlic, chopped
1 small onion, chopped
1/3~1/2 Kabocha pumpkin, pealed and cut into small pieces
2 cups water
1 bay leaf
1 sprig of thyme
1 cup soy milk
salt and pepper
rustic croutons
– 1/2 cup large pieces of baguette, roughly torn by hands
– olive oil
– salt and pepper
– paprika
1. Cook garlic and onion in oil for a few minutes.
2. Add Kabocha and continue to cook.
3. Add water, bay leaf and thyme. Boil and then simmer on low heat.
4. Add soy milk, salt, and pepper.
5. Make croutons. Coat the bread pieces with oil. Sprinkle salt, pepper, and paprika. Bake them in a toaster until slightly brown.
6. Serve soup with the croutons.
かぼちゃポタージュと田舎風ざっくりクルトン
先日ふつうのスーパーでかぼちゃを見つけたと書きましたが、それがコレ(⇡)です。
日本のかぼちゃ、と記してありますが、このかぼちゃはカリフォルニア産、とのこと。
今回はかぼちゃポタージュをつくりましたが、ホントかぼちゃの甘さがしっかりしていて美味しゅうございました。
ざっくりと手でちぎって作ったクルトンとともに完食。
この後、別のスーパー(Co-op、生協、と呼ばれるスーパー)にて、またまたかぼちゃ発見。
⇡の写真、かぼちゃはどれか分かりますか?
上右が正解。
下左は似てますが、コレはバターカップと呼ばれるもの。
買ったことないのですが、こちらも気になる存在です。
ちなみに、このお店のかぼちゃは、お隣州のウイスコンシン州産とのこと。
しかも、オーガニック(無農薬)とのことなので、今度こちらも試してみたいと思います。
