Potato Salad with Pickled Radish

This is an unusual version of potato salad in our house, because there is mayonnaise in it. I usually don’t add mayonnaise to my potato salad because Terry won’t touch it if I do. This time I wanted to add my homemade pickled radish to my potato salad so I decided to add mayo, too. Terry doesn’t like pickled radish anyway, so I decided to make this salad just for myself this time. The pickled radish gives a nice flavor and texture to the salad. The pink color is very pretty, too.

ラディッシュピクルス入りポテトサラダ

先日ピクルスにしたラディッシュをたっぷり入れて作ったポテトサラダ。
甘酸っぱいピクルスがいいアクセントになる。
ラディッシュは数日漬けただけだけれど、皮の赤い色が液について、全体がピンク色に染まっていた。
ぱっと見た目は赤カブみたいに見えるかな。
テリーはピクルス入りのものは絶対何も食べないので、今回は自分用と割り切って、たっぷりマヨネーズも入れる（テリーはマヨネーズ入りサラダには手をつけない。。。）。
ラディッシュピクルス入りポテトサラダ： 茹でたジャガイモ、ラディッシュピクルス、赤玉ねぎ、ケイパー、ディル、マヨネーズ、砂糖、塩、こしょう
