Wasabi Teriyaki Tofu Burger – Vegan

Using the tofu patties I put together some burgers for our lunch the other day. I made teriyaki sauce by cooking and reducing the mixture of soy sauce, cane sugar, and wasabi until slightly thickened. I put tofu patties into the sauce and let them rest for a few minutes to let them absorb the sauce. You can add any vegetables you like to make this burger, but this time I used tomato, red onion, avocado, and arugula. I thought I made enough patties to freeze for future use, but we’ve already eaten 11 out of 12 patties between the two of us in a week!

Tofu Patties – vegan

We had a big family get-together yesterday. We were supposed to bring some dishes to share and also what we wanted to cook on a grill. Terry and I try to stay with our plant-based diet as much as possible but I don’t mind derailing a little on an occasion like this. I made these tofu patties to keep in our freezer for a future quick lunch or snack, and since I ended up with so many of them, Terry wanted to take these to the party. I was rather against it. I pictured Terry eating a tofu burger in the middle of all his cousins eating big beef burgers. I said to him, “Honey, you’ll be teased!” But he didn’t care. So we brought two of these tofu patties to the party. I guess nobody noticed we were eating no-meat burgers. They probably looked more like turkey burgers. (we brought cooked ones so we didn’t grill them. We just warmed them up in the microwave oven.)

The texture of these patties are very different from that of other vegan burgers, let’s say black bean burgers. I don’t know how to describe it, but it’s s lightly chewy and not so “beany”. It’s nice to have different vegan burger options. Another thing I like about this patties is that while the outside of the patty is crispy, the inside stays moist. I list the recipe below. This is the basic, and you can add quinoa, corn, herbs, or vegetables if you like.

Tofu patties (makes 12 small patties):
2 firm tofu – tear with hands into small pieces, cook in boiled water, dry, then mash
2 garlic cloves – cooked and mashed
1/2 teaspoon grated ginger
2 potatoes – grated
1/2 cup green onion – chopped
1/2 cup flour plus more for dusting
1 tablespoon soy sauce
salt and pepper
2 tablespoons canola oil

1. Combined all the ingredients except for canola oil.
2. Make patties.
3. Dust with flour on both sides.
4. Cook both sides with canola oil in a pan, for about 3 to 4 minutes each side.

Barbecue Tofu

It’s always fun to make your own BBQ sauce and I often experiment with different ingredients. This time I decided to add some cherry preserves to give some sweet, tangy, and fruity flavor to my BBQ sauce. This would go well with any meat, but since we don’t eat much meat any more, I thought why not using it for tofu? I smeared a generous amount of sauce on tofu and broiled in the oven until the sauce was thickened and caramelized around the edges of the tofu. Serve with additional BBQ sauce on the side.

Cherry BBQ sauce: ketchup, cherry preserves, cane sugar, white vinegar, soy sauce, Worcestershire sauce, ground mustard, cayenne pepper, garlic powder, salt, pepper
