Avocado Soy Bean Pasta
This was my lunch from a few weeks ago.
I make a pasta dish like this a lot and I can’t remember exactly when I made this.
This was freshly cooked pasta served with avocado, sticky soy beans (or Japanese natto), daikon pickles, arugula and a drizzle of chili soy oil.
I’m a huge fan of avocado and I eat pasta with avocado a lot.
I placed the daikon pickles on top for its look, but it actually became a major part of this flavor/texture combination.
The sweetness and the crunchiness of the pickles was perfect with the creamy avocado.
Avocado Soy Bean Pasta
100g cooked pasta
1/2 avocado
1 small package sticky soy beans (Japanese “natto”)
pickled daikon (daikon radishes pickled in a mixture of 1 part vinegar, 1 part sugar, and some salt for a few days)
1/2 cup arugula
chili soy oil
– 1/2 tablespoon soy sauce
– 1/2 tablespoon white vinegar
– 1/4 teaspoon canola oil
– 1/2 tablespoon sugar
– 1/4 teaspoon garlic chili paste
1. Place avocado, soy beans, daikon pickles, and arugula on top of cooked pasta.
2. make chili sauce oil. Combine all the ingredients. Drizzle oil over the pasta.
