Meatless Chinese Pepper Steak (青椒肉絲)
Since We switched our diet to the 95% plant-based diet two years ago, I’ve been having so much fun creating meatless dishes. When I ask Terry what kind of food he wants me to make meatless, he almost always says, “Swedish meatballs”. Over the last two years I’ve learned there are dishes that are easier to be adapted for a meatless dish and there are other dishes you really shouldn’t even try. And I think Swedish meatballs are one of the latter, unfortunately (Although I do make meatless/vegan Swedish “meat”balls once in a while when I’m in the mood.)
Based on my two-year experience with the 95% plant-based diet, I’ve realized that many of the Chinese dishes are easier to make meatless versions of. There are a couple of reasons. One is that the sauce usually has such a strong flavor that you don’t have to rely too much on the flavors from the meat. Another reason is that meat is usually cooked with other ingredients, usually with lots of vegetables, so taking the meat out of the dish is much easier to do; it would be hard to make a steak or BBQ ribs without meat!!
This traditional Chinese dish, pepper steak (or 青椒肉絲), is delicious when made meatless. I used portobello mushrooms in place of beef. The thick meaty portpbello mushroom gives a nice balance to the crunchy green pepper and bamboo shoots. The mushrooms also absorb the flavorful sauce very well.
2 large portobello mushrooms, thinly sliced
1 tablespoon sesame oil
1 tablespoon sherry
salt
pepper
1/4 cup corn starch
canola oil
1 green pepper, thinly sliced
1 can bamboo shoots
1 tablespoon sherry
1 tablespoon sugar
1 tablespoon soy sauce
1/2 tablespoon oyster sauce
1. Combine mushrooms well with oil, sherry, salt, pepper, and corn starch.
2. Heat oil in a large pan. Cook peppers and bamboo shoots. Take them out of the pan.
3. Add a little more oil to the pan. Sautee the mushrooms. Put the green peppers and bamboo shoots back in the pan.
4. Add the rest of the ingredients. Cook for a few more minutes while stirring.
Is this plant-based?: Not 100% (but definitely 95%) because of the oyster sauce.
ミートレス青椒肉絲
95%植物性食生活を考えてらっしゃる方、
最初の一歩が踏み出せずにいるのは、多分いつも食べているものが食べられなくなる、と、いう不安があるのではないでしょうか?
大好きな料理のいろいろ、あれも、これも、食べられなくなる~!、と
こういう引き算的な考えは、始めると気がめいるのでやめましょう(苦笑)。
反対に、この不安をチャレンジに変えるのがお勧め!
好物の料理を、いかに肉ナシで、しかも美味しく(←ココ大切)作り変えることができるか、というチャレンジ。
成功した時は、何とも言えない嬉しさが伴いますよ~。
ただ、料理によっても、肉を抜くのが比較的簡単なものから、どうやってもムリでしょう、というものまで、幅広いんですよね。
たとえば、私の場合、どうしてもステーキが食べたくなる時は、偽肉ではなく(笑)、本当の美味しいステーキ肉を買ってきて焼きます。
以前と違うのは、どでかいサイズのものを買わずに、質の良い小さめサイズの肉を選んで、たっぷりの野菜と一緒にいただくことです。
私はテリーによく、どんな料理を植物性アレンジで作ってほしい?、と聞くのですが、
返事はいっつも同じ、
Sweedish Meatballs(スエーデン風ミートボール)。
確かチャレンジしたことあったと思うのですが、コレは植物性にアレンジするのはちと難しいものの一つ。
まず、主役が肉と乳製品(牛乳、生クリーム等)、で、コレ、という脇役がナイ。。。
チャレンジした時は、確かきのこ“ミート”ボールと豆乳ソースで作ったと思うのですが。。。
反対に、植物性にアレンジしやすい料理に多いのが、中華料理。
理由としては。。。
1.まず、味つけが濃いこと。
なので、肉自体の風味に頼らなくっていいから。
2.野菜や豆腐等脇役が多い。
なので、量的にも、肉だけに頼らなくっていいから。
と、いうことで、今回ものすご~く前置きが長くなりましたが(笑)、
今日紹介の一品は、ミートレス(肉ナシ)青椒肉絲です。
牛肉の代わりに、今回は、ポータベラマッシュルーム。
大きい肉厚のマッシュルーム。
風味もしっかりあって、牛肉と同じく、しっかりたれを吸ってうまく味付けができます。
実は代用、という言葉を使うのはあまり好きじゃなくって、牛肉の代わりとして食べる、というより、もう別料理としてこのマッシュルーム味をしっかり楽しんでいただきたいなあ、と思います。
この他にも、たとえば麻婆豆腐なんかも、肉ナシで美味しくできる料理の一例ですね~。
ちなみに、この青椒肉絲、オイスターソースが入るので、植物性100%(ヴィーガン)ではありません。
