Super Moist Mocha Cake with Hazelnut Cream

Here is my last night’s creation. A moist cake or a.k.a. failed chiffon cake… I don’t know how well chiffon cake is known in the US, because I never find it at any bakeries or cake shops. Chiffon cake looks like angel food cake but it’s actually very different. Chiffon cake is lighter, more moist, more delicate, and more tasty in my opinion. Chiffon cake is very popular in Japan. It’s a great cake and one of my favorites, but it’s definitely one of the most difficult cakes to make (at least that’s how I feel…). Last night everything was going so well until after I took the cake out of the oven and turned it upside down; you’re supposed to do this with chiffon cake. I noticed that the outside was perfectly baked, while, the inside was still rather moist. And they started separating from each other… When it was completely cooled, there was no way for me to keep the whole cake in one piece. I was so disappointed. Apparently I didn’t bake it long enough. However, when I tasted the inside part, it was actually quite tasty! It doesn’t taste like uncooked batter, but it tasted like a very moist cake! So instead of throwing it away, I decided to keep the whole thing (both the outside and the inside parts) and even make a blog post about it! I made hazelnut flavored whipped cream and it was perfect for my super moist mocha cake. I would love to make another attempt and hopefully I can post a beautiful tall chiffon cake at this blog sometime soon.

半生ケーキ、別名、失敗シフォンケーキ(苦笑)。
シフォンケーキは難しい。。。
実は今回はオーブンに入れるまで絶好調だったのに、焼き時間が足りなかった、というなんとも初歩的ミスで失敗。
真ん中の辺りが半生な感じで、きれいに焼きあがった周りと真ん中が分離してしまった。
かなり落ち込んで捨ててしまおうと思いつつ一口味見してみると、これが実は悪くない(笑)。
生焼けな味じゃなくって、し~っとりモイストな焼き上がりのケーキ、といった感じ。
あんまり美味しいので、捨てずにしっかり確保。
で、ついでにブログにも出しちゃうことにした(笑)。
へーゼルナッツシロップで味をつけたホイップクリームをた~っぷり添えて。
美味しいシフォンケーキレシピだったのでいつか近いうちに再挑戦するつもり。
うまく出来たら、使ったレシピも紹介するね(っていつになるのか。。。)。

Chiffon cakes were very popular in the U.S. in the 1950’s and 1960’s. They have the lightless of a angel food and the richness of a layer cake. Betty Crocker used to have a boxed chiffon cake mix! Chiffon cakes are classified as “foam cakes,” meaning they derive their volume from beaten eggs. Chiffon cakes usually contain a chemical leavener as well. Even though they contain many eggs, it was considered an “economical” cake to make. Citrus flavors were very popular and in the just released Betty Crocker Cookbook, we have scratch recipes for lemon, orange, peppermint and spice chiffon. The bake time on these particular recipes is 1 hour 15 minutes or until top springs back when touched lightly. Sometimes you can get great things when a recipe doesn’t quite turn out, as is the case for Toll House Cookies (a.k.a. chocolate chip cookies). Have fun with your next chiffon adventure. You are so knowledgeable!! Thank you for sharing the information. It’s interesting that chiffon cake was once popular in the US, too. Terry doesn’t know about chiffon cake, but it makes sense if it was popular in the 50’s and 60’s. The bake time is 1 hour 15 min? No wonder mine didn’t turn out well. I probably baked for only about 50min. Now I know how long it has to stay in the oven, I’ll definitely try again. 🙂
