Mochi Curry
I still had some mochi (Japanese sticky rice cake) left, and this time I decided to toast it quick and then put it in curry soup.
I’ve never done this before with mochi, but mochi is so versatile like pasta, and it seems to go well with almost anything!
This was absolutely delicious.
The texture of mochi is very unique and very sticky, and it’s probably not for everyone.
To tell you the truth, I never really cared for mochi for many years.
But now I’m so hooked!
I might have to go back to United Noodles to get more before they get rid of them; I’m afraid they might already have done so as mochi is a seasonal food.
1 mochi piece, toasted
curry soup
– canola oil
– 1/2 onion, chopped
– 2 garlic cloves, chopped
– 1/2 tablespoon shio-kombu (Japanese salted kombu seaweed)
– 2 water
– dark roux (1 tablespoon flour and 1 tablespoon canola oil cooked to make dark paste)
– curry powder
– salt and pepper
green onion, chopped
1. Make curry soup. Cook onion and garlic in oil for a few minutes. Add salted kombu and water. Boil and then turn to a low heat. Add roux, curry powder, salt, and pepper. Mix well.
2. Serve toasted mochi in the soup. Sprinkle chopped green onion.
