Hoji Tea Sesame Satsuma Sweet Potato Bread
Matcha is probably the most well known Japanese green tea outside Japan, but in their everyday life they don’t drink matcha very much. It’s often enjoyed more as a ceremonial tea.
Then what do Japanese people drink everyday?
Well they drink a lot of regular green tea, like sen-cha, but there are also many other different kinds of green tea they enjoy, including hoji tea.
Hoji tea is …
“… distinctive from other Japanese green teas because it is roasted in a porcelain pot over charcoal, whereas most Japanese teas are steamed. The tea is fired at a high temperature, altering the leaf color tints from green to reddish-brown. The process was first performed in Kyoto, Japan in the 1920s and its popularity persists today” from Wikipedia.
I enjoy adding the Japanese tea flavor to baked goods ant this hoji tea creates a unique wonderful roasted flavor in the bread!
I stuffed the bread with black sesame seeds and roasted Satsuma sweet potatoes.
I would not recommend using other kinds of sweet potatoes because the Satsuma sweet potato is very different from the sweet potatoes I find in the US; Satsuma is sweeter and much drier. I really don’t think the regular sweet potatoes you find in the US will bring the same results.
1.5 cup strong hoji tea, warm
1 tablespoon dry yeast
1 teaspoon salt
3 ~ 3 1/4 cups all purpose flour
1 tablespoon hoji tea leaves, ground
1 tablespoon black sesame seeds
1 cup roasted and cubed Satsuma sweet potato
1. Put warm strong hoji tea in a large container.
2. Add yeast and salt, and mix well.
3. Add flour and mix well with a wooden spoon.
4. Cover with a lid (not airtight) and let it rise in a container until it’s double in size, for about two hours.
5. Refrigerate overnight.
6. Form two balls. Roll the dough. Sprinkle ground hoji tea leaves (powder), sesame seeds, and cubed sweet potatoes. Roll them in and form balls. Let them rise for 40 minutes.
7. Preheat oven with a pizza stone and a broiler pan inside to 450 F twenty minutes before baking.
8. Slash a line in the middle of the top with a sharp knife. Put the loaf on the pizza stone. Put a cup of hot water into the broiler pan.
9. Bake for 30 minutes.

もうそろそろさつま芋とかぼちゃが見つかるかな、と思って近くのアジア食料品店へ出かけました。
かぼちゃは見つからなかったのですが、さつま芋はあって嬉し~い。
早速3本買ってきて、2本は焼き芋にしてさっそくいただきました(素直に美味しかったです)。
で、もう1本、何に使おう、と思って、こんなパンを作ってみました。
胡麻とさつま芋の組み合わせ、絶対美味しいだろうなあ、と思いつつ、もう一味、ということで、ほうじ茶風味に。
ほのかながらほうじ茶風味、香ばしさがいい感じ~。
スライスしたら、バターをたっぷり塗って。
コレは濃く入れたコーヒーにぴったし。
これでもか、と入れたさつま芋(焼きいもにしたものを切っていれました)が本当に私にはほっとする味。
ほうじ茶風味のパン、実はもう1種類違うものを入れて焼きました。
そちらはまた明日にでも紹介しますね~。
