I used to watch a lot of cooking shows, like this one, this one, and this one.
I now spend much less time watching cooking shows, but there is one show I still record.
The show is called “The Pioneer Woman” on Food Network. This is a link to her blog.
It may surprise you because the show’s host, Mrs. Drummond, and I really don’t have many things in common.
She lives on a ranch “in the middle of nowhere (that’s what she says; somewhere in South I guess)” with a cowboy husband and four kids, whereas, I live in a condo in the Midwestern urban setting with a husband, no kids.
I can’t really pinpoint the reason why I enjoy this show this much, but I guess I’m attracted to the very differences we have.
Her life on the ranch is so different from mine and it fascinates me.
She usually cooks for her family and she does not make a lot of vegan or vegetarian food as you can guess; her husband raises calves for the purpose of beef production. (She did say, however, in one episode that she used to be a vegetarian before she got married.)
So I’ve never followed her recipes, but I simply enjoy watching her show and get inspiration for my mostly plant-based cooking. I also like her personality (not that I know her in person, but she just seems maybe a bit shy but an intelligent person).
A few days ago I saw her cooking cheese enchilada for lunch for her father-in-law and his crew who were building fence for the ranch, and watching the show made me want to make enchilada.
I had never made enchilada and it’s not usually what I order when I go to a Mexican restaurant.
But what can I say? Her shows always does this to me.
My enchilada has no cheese but creamy tofu and a lot of spinach and mushroom as a filling, and it was served with a lot of homemade enchilada sauce and creamy tofu “cheese” on top.
I did get some ideas from her show to make my enchilada sauce, but I had to make mine with whatever I had in our kitchen that day and I also kept mine plant-based.

enchilada sauce (this makes a lot of sauce, more than enough for two servings)
– canola oil
– 2 cloves garlic, chopped
– 1 onion, chopped
– 4~5 large pieces roasted red pepper from a jar
– cumin
– chili powder
– cayenne pepper
– 2 tablespoons flour
– 2 cups water
– 1 package vegetable dashi or 2~3 vegetable base cubes
– 1 can (345 ml) tomato juice
– 1/2 small can or 3 oz of tomato paste
– 1 tablespoon sugar
– a few splashes of Louisiana hot sauce
– salt and pepper
filling
– canola oil
-2 garlic cloves, chopped
-1 cup mushroom, chopped
-2 cups spinach, chopped
salt and pepper
-creamy tofu (extra firm tofu, cooked garlic, white vinegar (or lemon juice), sugar, salt, pepper; pureed together with a hand blender)
corn tortilla, briefly heated in a pan
cilantro, chopped
1. Set oven to 350F.
2. Make sauce. Cook garlic and onion in oil for a few minutes. Add all the ingredients down to flour. Cook for another few minutes. Add all the rest of the ingredients. Boil and then simmer.
3. Make filling. Cook garlic, mushroom, and spinach in oil. Salt and pepper. Remove from heat. Mix the vegetables with creamy tofu; leave some creamy tofu for later.
4. Assemble. Spread some sauce in a pan. Spread sauce on tortillas. Place the filling and roll. Place them in a pan. Pour the sauce over them.
5. Bake for 10~15 minutes.
6. Serve with creamy tofu and cilantro.
メキシコ料理 – きのことほうれん草のエンチラーダ
以前はもうこれでもか、というぐらい(苦笑)料理番組ばっかり見ていた時期もあるのですが、
最近はぐっとそんな時間が減りました。
でも最近一番よく見ているのは、この番組。こちらは彼女のブログ。
彼女は4人の子供のお母さん。
南部の田舎にある牧場を運営するカウボーイのご主人と子供さんと一緒に何エーカーにもわたる敷地内にある大きな家で暮らしていらっしゃいます。
番組中にちらっとおっしゃていたのは、彼女、結婚前まではベジタリアンだったとのこと。
もちろん、肉牛牧場を運営されるカウボーイのご主人と結婚してからは、肉を食べるようになったらしく、彼女の作る料理はベジタリアンやヴィーガンからはかけ離れたものばかり。
それなのにこの番組になぜ惹かれるか、と言ったら、なんでしょうね~(笑)、彼女の少しはにかんだところがありながらも明るい性格が好きなのはもちろん、自分とは全くかけ離れた世界(南部、田舎、牧場、子供持ち、etc.)に暮らす彼女の生活に魅力を感じるからなのかもしれません。
そして、もう一つ、彼女の番組を見ていると、自分なりにレシピのアイデアが浮かんでくるんです。
実を言うと、彼女のレシピをそのまま作ったことは一度もないし、番組を見ていて浮かんでくるレシピは番組中に紹介されているものとまったくかけ離れたものだったりするのですが(笑)、番組は見ていてストレートに楽しめるし、しかも自分なりのアイデアが浮かんでくるなんて、一石二鳥(笑)。
と、ちょっと前置きが長くなりましたが、このエンチラーダも彼女の番組を見ていてひらめいたもの。
今回は、一応つながりはあります。
というのも、彼女がチーズエンチラーダを作っているのを見て浮かんだアイデアなのですから。
でも、野菜をたっぷり中に入れたところが違っているし、しかも、私バージョンは、ヴィーガン!
肉ナシ、チーズナシで作ってあります。
ソースは彼女の作っているのを少し参考にさせてもらいました。
エンチラーダ、何かというと、トウモロコシ生地のトルティーヤに具材をのせて巻き、スパイスをきかせたソースとチーズをかけて焼いたメキシコ料理。普通具財は肉やチーズが多いかな。
私は、マッシュルームとほうれん草、そして、それをまとめるのに、豆腐ペーストを作って、具財にしました。
上にアイスクリームのように乗っかっているのも、チーズ風に味付けした豆腐ペースト。
チーズなしなのに、“クリーミー!”、とテリーをびっくりさせることができました(嬉)。
ソースは見た通り、これでもか、というぐらいたっぷりかけるのがうち流。
テリーも私もうちはどんな料理でもソースはどぼんとつかるぐらい沢山かけるのが好みなのです。
