Pasta with Parsley Sauce and Roasted Vegetables
We’ve been living in our new condo for a few weeks now, and I just slowly started cooking. I still find myself sometimes pausing in the middle of the kitchen looking for something, but overall my adjustment to our new kitchen has been pretty smooth. I’ve also started taking pictures for my blog in our new place recently. I’m still trying to find good spots/ways to do so, but I think I will just take my time and enjoy this process.
Here is a pasta dish I made for my Saturday lunch today. I haven’t done my weekend grocery shopping yet (that’s on my today’s to-do list), so, this is something I put together with everything that was left in our fridge. I made the quick and easy parsley sauce (I just pureed cooked garlic, fresh parsley, olive oil, lemon juice, sugar, salt, and pepper), but other than that I just used the already cooked left-over pasta and already roasted left-over vegetables. It feels good to start a weekend with a “green” food.
Pasta with Parsley Sauce and Roasted Vegetables: cooked linguine, roasted vegetables (peppers, Brussels sprouts, grape tomatoes), and parsley sauce (parsley, cooked garlic, olive oil, lemon juice, sugar, salt, pepper)
