  • I keep meaning to make soft boiled eggs for breakfast some time – I usually poach them. I would be all over this breakfast also! I’m a big horseradish sauce fan too.

BTW, the first time Patrisha was in NY with me (back in the early 90’s) she had bagels & lox…and really liked it! Fish can be for breakfast even here. 🙂

  • This looks great. So light and delicious for a morning meal, but one that would keep your energy up much longer than cereal or toast.

  • I love both soft boiled egg and poached egg. Now I probably make soft boiled eggs more often because I learned a little trick (cool them in a cold water right away after cooking). You’re right. Bagels&lox is a popular breakfast dish, isn’t it. I guess it’s more so on the east coast, though. I feel like I used to eat bagels much more frequently when I lived in Boston.

  • Creamat

  • Olive

  • Thank you, Nikki! I usually don’t have enough time to make breakfast in the morning, but its fun to make breakfast like this on the weekend. 🙂

  • Reiko, just responding to your earlier comment (if I understood it right) – I noticed in Japan that egg yolk is much more orange than in the US. It is more yellow here. I wonder if it is just different feed for the chickens or if the chickens themselves are a different breed.

  • Yes, she was saying exactly the same thing about the eggs in Japan and the US. This would be interesting to look into….
