Smoked Trout and Potato Brandade
We decided not to have cable when we were at our old house because we didn’t feel it was worth the money we were paying. Then we moved to our new condo a few months ago. We didn’t choose to have cable, but our association fee automatically covers cable, and now HGTV and Food Network are back in our life. It’s good and bad, because I now watch way more TV, although I try to watch only the shows I really like and record so that I don’t just sit and stare at TV all day long. One of my favorite Food Network shows is “Diners Drive-ins and Dives”. The show always makes me want to cook and eat and also gives me lots of ideas. I actually didn’t know anything about “brandade”, but when I saw this restaurant being featured and their chef was making brandade, I had to try it myself. I know you’re supposed to use salted cod to make this dish, but I happened to find beautiful brown sugar smoked trout at a grocery store, so I decided to use this in place of cod. The extra smoky flavor was really nice. I served this with cooked red onion just as the restaurant was doing.
Smoked Trout and Potato Brandade:
1/2 pound smoked trout
1/2 pound potato, cooked
2 cloves garlic, cooked
about 1/2 cup heavy cream
olive oil
salt
pepper
cumin
parsley
1. Puree trout, potato, and garlic in food processor.
2. Add heavy cream, olive oil, cumin, salt, and pepper.
3. Drizzle some olive oil on top and brown the top in the oven or toaster (broiler).
4. Sprinkle parsley.
5. Serve with red onion garnish, additional parsley, on toast or sliced baguette.
Red onion:
Cook sliced red onion in olive oil. Add cane sugar, red wine vinegar, salt, pepper, crushed red pepper. Cook until liquid is mostly absorbed in onion.
燻製とポテトのディップ
コッドという白身魚で作られることが多いデイップですが、私はたまたまおいしそうなマス(trout)の燻製を見つけたので、それで代用。
茹でたポテトとにんにく、燻製を生クリーム、オリーブオイルとともにピュレーして、さらにオーブンで焼き上げたら出来上がり、という簡単ディップ。
トーストに、これをたっぷりのせて、少し甘酸っぱく（そしてちょっぴり辛く）味付けした赤玉ねぎをのせたら美味しいスナックの出来上がりです。
燻製を使ったことで、スモーキーな風味が堪能できました。
先週末フットボールの試合をテレビで鑑賞用に作ってみたもの。
ちなみに地元バイキングズは今年は負けてばっかり。
今シーズン最後の試合は勝ったものの、予想通り、次の日監督は首になりました。
フットボール、ルールが分からなかった昔は全然面白いと思わなかったのですが、アメリカでは大大人気のスポーツ。
ちょっとぐらい知っていないと世間話についていけなかったりします。
最近はテリーよりも私のほうが熱心に見ていることが多かったりして（テリー、試合の半分もいかないところで、大抵ぐーぐー寝ちゃってます（笑））。
