Potato and Cauliflower Curry

I didn’t use to like potatoes in my curry, but that’s changed. I still don’t like big pieces but I like some small pieces of potatoes and the way they crumble and thicken the curry.

ポテトとカリフラワーのココナッツカレー

子供のころはなぜかカレーのジャガイモがあまり好きではありませんでした。

食べないわけではなかったのですが、自分でよそうと、じゃがいも以外の具をついつい入れていたような。。。

ところが、このココナッツカレーにはじゃがいもがあうんですよね～。

薄めに切って入れるじゃがいもが美味しい！

薄いのでもさもさっとしないし、少しずつ崩れてくるところも好き。

お気に入り市販瓶入りのインドカレーペースト、缶トマトピュレー、ココナッツミルクなんかが入ってます。

カリフラワーとじゃがいもの組み合わせもお気に入り。

アスパラガス入りキノアリゾット

ぷちぷちキノア、大好きなのですが、リゾットにしても美味しい～！

トマト味のリゾットに作ったら、アスパラガスを仕上げにさっと入れて、ちょっぴりモッツレラチーズをかけたら出来上がり。

これに、たっぷりサラダで大満足ランチ、またはディナーとなりま～す！

アメリカって夕食でも品数が少ないのよね（苦笑）。。。

日本みたいにたくさん小鉢や小皿が並ぶ食卓が理想だけど、まっ、洗い物も少ないからいいかな、なんて。

Coffee Jelly in Almond Milk

The first time my mom made coffee jelly and let me eat it, I remember I was very excited. I felt like I was treated as a grownup. I was not a coffee drinker as a child and I actually didn’t enjoy coffee until I was in my early 30’s. For some reason I liked my mom’s coffee jelly, maybe because it was always served with a lot of whipped cream. I was very tempted but I decided to against whipped cream this time and went with almond milk.

久しぶりにコーヒーゼリーを食べました！

子供のころよく母が作ってくれてたのを覚えてますが、自分で作ったのはたぶん初めてかな？

このほの苦さと甘さが美味しいんですよね～。

ホイップクリームをあわせようと何度も思ったのですが（笑）、今回は大人っぽく（？）アーモンドミルクに入れてみました。

ゼリーを崩していくと、ミルクが少しずつコーヒーミルクに変わっていくんですよ～。

Salmon with Kiwi Salsa

We’ve been on the 95% plant-based diet since last summer. The rest of the 5% can be various things, but in my case salmon often becomes my 5%. I still don’t eat a large amount of it. I usually choose one of the smallest fillets I can find at the fish section of the grocery store. This salmon was poached and then served with homemade kiwi salsa.

Kiwi salsa: kiwi, celery, green onion, cilantro, cumin, honey, salt, pepper, canola oil, lime juice

サーモンとキーウイサルサ

サーモン、先日少し買ってきたので、ポーチしました。

熱湯にお酒を少し入れたら、サーモンを入れて、ふたをして弱中火で６～７分したら出来上がり。

さっぱりといただきたかったので、キーウイのサルサ。

緑のものばかりを集めて作ってみました。

キーウイ、セロリ、小ねぎ、香菜、ライム果汁、はちみつ、塩、こしょう、クミン、サラダ油を混ぜたら出来上がり～！

Cauliflower Steak with Sun-Dried Tomatoes

I’ve been wanting to make this for a while. It’s just a lot of fun to slice cauliflower. Its large size and the funky shape make this a great vegan/vegetarian entree. I had so many different ideas about how to dress this, but I decided to go with an Italian theme this time. This cauliflower steak was served with sweetened and thickened balsamic sauce and sun-dried tomato sauce.

Cauliflower steak with sundried tomatoes: cauliflower slice (pan fried and then roasted in the oven with olive oil, salt, and pepper), balsamic sauce(balsamic vinegar was cooked with sugar until thickened), sun-dried tomato sauce (pureed sundried tomatoes, pureed cooked garlic, sugar, salt, pepper), parsley

カリフラワーステーキ

カリフラワーを丸のままでスライスしたもの。

この大きさ、迫力がありますよね～。

形もなんだか可愛い！

まずはフライパンで焦げ目をつけて、そのあとオーブンで軽くローストしました。

今回はイタリア風に、バルサミコ酢に砂糖を入れて甘く煮詰めたものと、サンドライトマト、茹でたにんにく、砂糖、塩コショウをピュレーしたものをかけて、さらにパセリをふりかけて出来上がり～。

和風や中華風に仕上げてもイケそうです。

Bottomless Apple Pies

I was in a mood for an apple pie, but I didn’t want to make a whole regular sized pie. It’s one of the lessons I’ve learned. If we have sweets in our house, we’ll eat it. Sometimes we even eat them mindlessly. I like to eat a small amount of sweets once in a while, but I don’t want to have too much sitting around home. So I decided to make a few individual sized apple pies. Since I used these shallow dishes, it didn’t make sense to have crust both at the bottom and at the top. I loved these bottomless pies. It’s so easy and quick to make! I added lots of orange zest to the filling, which gave a nice refreshing citrus flavor.

Bottomless apple pie: apples, lemon juice, sugar, salt, flour, orange zest, cinnamon, frozen pie crust(I prefer Pillsbury’s)

底なしアップルパイ

甘いものは時々食べたくなるし、作りたくなるのですが、たくさん作りすぎるのが危険。

うちにあると、ついつい食べてしまうんですよね～。

で、最近は、たくさん作ったときは残りを職場にもっていくか、最初から少ししか作らない、というように決めてます。

先日アップルパイが食べたい気分だったのだけれど、丸々大きいサイズでは作りたくなかったので、一人用のミニサイズを数個作ることにしました。

浅い容器を使ったので、底とトップにクラストをつけるのもなんだなあ、ということで、底なしアップルパイに決定。

これ、簡単でおすすめ～！

スライスしたリンゴに、砂糖、塩、小麦粉、レモン汁、シナモン、おろしたオレンジ皮をまぶしたら、容器に入れて、上に市販のクラストをかぶせて穴をあけたらオーブンで焼くだけ。

クラストに穴をあけるついでにちょっとお遊び。

なにか粋なことを書こうと思ったのですが、落書きと同じで、なかなかアイデアって浮かばないものですね～（笑）。

で、ありきたりですが、名前を穴でぽちぽちと書いてみました。

ハート型も作ったのですが、これを見たテリー、バレンタイン？って。

今年はすぎちゃったけど、中をチョコレートにしたらバレンタインデーにチョコレートパイっていうのもいいかも。
