Spiced Apple Almond Cake

This moist apple cake is perfect for snack and breakfast. Baking this cake is a nice treat as the mixture of the nutty and caramelized flavors from the almond meal and cane sugar makes the entire kitchen smell so good. You can see I used one egg for this cake. I’m planning to use another 1/4 cup of apple sauce to replace the egg to make this cake vegan. I’ll let you know if that works.
Spiced Apple Almond Cake (adapted from Gama’s apple spice cake by Hilary Farquhar published in Woman’s Day September 2012)
3 Gala appales, halved and cut into 1/2 in thick wedges
1 Tbsp fresh lemon juice
1 cup all purpose flour
1/2 cup almond meal
1 tsp baking soda
a pinch of salt
1 tsp ground cinnamon
1 egg
1/4 cup unsweetened apple sauce
1/2 cup granulated sugar
1/2 cup cane sugar
1/2 cup canola oil
1/4 cup orange juice
1 tsp vanilla extract
confectioners sugar
1. Heat oven to 350F.
2. Toss the apples with lemon juice.
3. IN a bowl whisk together the eggs, sugar, oil, orange juice, and vanilla.
4. Add the mixture of flour, almond meal, baking soda, salt, and cinnamon.
5. Mix well.
6. Add the half of the apples and mix until combined.
7. Spread the batter into a prepared 8×4 inch pan.
8. Arrange the remaining apples on top.
9. Bake until a wooden pick inserted in the center comes out clean, 50 to 60 minutes. Let cool. Dust with confectioners sugar.
ごろごろりんご入りアーモンドケーキ

太めにスライスしたりんごがごろごろっと入ったケーキ!
小麦粉と一緒にアーモンド粉が入って、しかも、さとうきび糖入り。
焼いているとなんとも香ばしい匂いがキッチン中に広がりま~す。
オレンジジュースが入っているせいか、しっとりした焼き上がりにたっぷりのりんごが美味しいです。
シナモンも入って、秋にぴったり。
コーヒーとも、紅茶とも、う~ん、多分緑茶でも、あいそう。
おやつはもちろん、朝食にもいけます。
