Beet Kale Lentil Soup

I guess I forgot about this post for a long time because this soup was made back in January. This is the type of soup I like to make a big batch of on the weekend. What I do is I add all the vegetables found in the fridge (so that I won’t waste any vegetables and at the same time I can clean the fridge). I really enjoyed this soup because it had many of my favorites, such as beet, kale, and lentils. I’ve been really into lentils recently. It’s easy to cook and I really like their texture as well as their taste. I don’t know why I never bought them before!

ビーツとレンズ豆のスープ

気づいたら、このスープを作ってからもう２ヶ月ぐらいたっていた。。。
そのうちアップしようと思いつつつい忘れてしまっていたのね～。
大好きなものばかりを入れて作ったスープ。
ビーツ、ケール、レンズ豆。
特にレンズ豆は最近凝っていてよく食べている。
超節約生活をしている男性のブログで毎日のようにレンズ豆を食べている、というのを読んだことがあるけれど、安くって簡単に調理出来るのは確か。
ちょっと調べてみたらビタミンＢがたっぷり含まれているらしいし、なんといってもこの食感が好き。
小さめということで食べやすいのも◎。
ちなみに、きれいな赤い色のスープはビーツの色が出たもの。
