Carol & Kayla’s Lasagna

Terry’s sister, Carol, and her daughter (our niece), Kayla, are visiting the family here in Minnesota from Arkansas this summer. It’s great to see them again. The first thing Carol asked me was if I would let her use our kitchen one night so that she could cook for us! My answer was, of course, “YES!” Carol and Kayla made dinner for Terry and I last Friday. I know we probably should host a dinner night for the guests, but this was Carol’s idea to make her famous lasagna because she knew that it’s Terry’s favorite. Terry and I both love lasagna, but I don’t make it very often. So this was such a nice treat for us. Those many steps you have to take in the process of making lasagna intimidate me, and actually I’ve probably made lasagna only once or twice in my life. Anyway, the lasagna Carol and Kayla made for us was DELICIOUS!! An interesting thing is that I love their lasagna that contains lots of cottage cheese and ricotta cheese, both of which I usually don’t care for. I learned a lot from watching them cook, so maybe I can replicate this lasagna, or at least something close to it, sometime soon (hopefully…).

キャロルとケイラのラザニア

二人いるテリーの妹のうち一人、キャロルとその家族は数年前に南部アーカンソー州へ引っ越した。
夏になると、彼女の娘（私たちにとって姪）ケイラ（現在１６歳）が数週間ミネソタに遊びにくるのだけれど、今年はお母さんのキャロルと二人で遊びにくることになった。
久しぶり～、と抱き合ったあと、すぐにキャロルが私にした質問が、“レイコ、一晩都合のいい日にキッチンを貸してくれる？”というもの。
へっ？という顔をする私に、“二人に夕飯を作ってあげたいから”、というキャロル。
彼女のラザニアはテリーの大好物で、キャロルはどうしても滞在中に一度作ってあげたい、ということ。
もちろん私の返事は“ＹＥＳ！！”（笑）
ということで、先週の金曜日に、キャロルとケイラが二人で、特製ラザニアを作ってくれた。
これが本当に美味しい。
私は実はリコッタチーズもカッテージチーズ（特に）も大の苦手なのだけれど、彼女のリコッタチーズとカッテ－ジチーズたっぷり入ったラザニアは大好き、っていうのはどういうことなのか不思議（笑）。（さらに、チーズはこのほかにも、モッツレラチーズと、イタリアン４種類ブレンドされたチーズも入っている！）
今回は作り方を密かに観察（笑）、キャロルにいろいろコツも教えてもらったので、私もそのうち自分で作ってみることが出来るかも～。
