Walnut Butter Rum Cookies

Merry Christmas! Terry and I had a wonderful time with our family tonight.

Here are Butter Rum Cookies that I made yesterday. There are lots of walnuts and butterscotch morsels in these cookies, and a hint of rum flavor makes these even more tasty. I tend to overbake my cookies, and this time Terry helped me avoid that by standing right by me in front of the oven and encouraging me to take them out when they were still gooey-looking. I was a bit afraid that the cookies would be too soft, but I have to admit they turned out great. They were perfectly soft and chewy, but not too soft.

Walnut Butter Rum Cookies
-1/2 (1 stick) of butter, room temperature
-1.5 cups of brown sugar
-1 egg yolk
-rum – the same amount of one egg white plus 1 teaspoon
-2 cups of all-purpose flour
-1/2 teaspoon of baking soda
-1/2 teaspoon of salt
-1.5 cups of chopped walnuts
-3/4 cup of bite-size butterscotch morsels

1. Cream the butter and sugar together until light and fluffy.
2. Add the egg yolk and rum until well incorporated.
3. In a separate bowl sift together the flour, baking soda, and salt. Slowly add the flour mixture to the butter mixture and mix until just incorporated. Fold in the walnuts and butterscotch morsels. Cover with plastic wrap and chill for 30 minutes.
4. Preheat the oven to 350F. Drop spoonfuls of the cookie, about 1 inch balls, onto cookie sheets lined with parchment paper. Bake for about 11 minutes or until lightly browned around the edges.

くるみとバタースコッチ入りラム酒風味クッキー

クリスマスを一緒に祝おうと、テリーと私は今晩は義兄宅にお呼ばれ。
参加者は私達と義兄家族の他に、義父夫婦と、比較的こじんまりとした集まり。
義兄（辛いもの好き）がスパイシーで美味しいチリコンカンを作ってくれて、あとは皆持ち寄りで、サラダやコーンブレッドなど、家庭の味が美味しい夕食。
やっぱりまた食べ過ぎた（笑）。

大人同士はプレゼント交換はしない、と決めているものの、義父夫婦はいつもこの約束を破って（笑）、私達に何か用意してくれる。
昨年は肉の詰め合わせをいただいたのだけれど、今年は豚のかたまり肉、海老、ホームメードアイスクリーム、ホームメードファッジ（アイスクリームに温めてかけるチョコレートソース）、ホームメードケーキという豪華な詰め合わせ袋！
食べること大好きな私達夫婦には本当に有難いプレゼントである。
早速いただいた海老をどうやって料理しようか今から考えたりしている。

今日アップのこのクッキーは昨日私が作ったもの。
ベーキングにしては珍しく私のオリジナルレシピ。
とっても美味しく出来たので、上記でレシピ（英語）を残しておくことに。
卵は卵黄だけを使って、その分ラム酒をたっぷり入れるのがミソ。
くるみはこまかくし過ぎずごろごろっと入れるのが私流。
くるみの他にバタースコッチ味のチップスもたっぷり。

いつもクッキーは、私、焼きすぎてしまうのだけれど、今回はテリーがオーブンの前で私の横にぴたっとくっついて、“出せ出せ”、とうるさい（笑）ので、いつもより早めに出したら、柔らかさが完璧で、ちょっと悔しいけど彼の言うことを聞いてよかったと認めざるを得ない（笑）。

写真でも分かると思うけれど、こうやって全体にひびが入るのが柔らかく仕上がった証拠。

こちらは昨夜から降ったりやんだりしながら着々と雪が積もっております。
今晩もまた降るらしいし。。。
明日は絶対ホワイトクリスマスになるはず。
