Pina Colada Pancakes

Well, here in Minnesota we don’t really have the weather in which we can fully enjoy a tropical cocktail, like Pina Colada, at this time of the year. But these Pina Colada inspired pancakes can at least bring back some of our memories from the tropical islands we’ve visited…
Coconut milk was used instead of regular milk for the pancake butter. A slice of pineapple was placed in each pancake. Served with butter and rum syrup.

南国を思わせるピニャコラーダ・パンケーキ

南国カクテルとして人気のピニャコラーダ。
私も大好きなカクテルの一つ。
ココナッツミルク、パイナップルジュース、ラム酒で作るもの。
冬がまさにそこまで（？ここまで？）来ているミネソタではちょっと場違いなカクテルだけれど、それでも気分だけでも（笑）南国気分を味わいたい、と思って、ピニャコラーダを意識したパンケーキを作ってみた。
牛乳の代わりにココナッツミルクを入れてタネを作る。
タネをフライパンにひいたら、パイナップルスライスを丸のままのせて、両面焼いたら出来上がり。
たっぷりバターとラム酒入りシロップをかけて。
