Eggs in Tomato Sauce

Cook an egg in tomato sauce in a sauce pan. Add mozzarella cheese right before the egg is cooked the way you like it. Pour the whole thing on sauteed sliced onion and chicken sausage. Sprinkle lots of chopped parsley. Serve with a toast.

卵のトマトソース煮込みで、ブランチ

簡単で美味しかった今朝のうちのブランチ。
夫にも大好評。
鍋にトマトソースを入れて熱くしたら、卵をぽとっと落として、蓋をして弱火で煮込む。
好みの固さになる直前に、モッツレラチーズをぱらぱらっとのせて更に蓋をしてチーズが溶けるまで待ったら火からおろす。
あらかじめ炒めておいた玉ねぎのスライスとチキンソーセージの上に卵・トマトソース・チーズをかけて、たっぷりパセリをかけたら出来上がり。
かりっと焼いたトーストを添えて。
今日日曜日は朝から雨、雨、雨。。。
一日中、家でまったりと過ごしている。
こういう日はつい食べ過ぎる（苦笑）。
