Kimchi Soup with Kale and Meatballs

Kimchi has a very strong flavor and smell, and it’s not for everyone. It’s the kind of food people either love or hate. But people who are not a big fan of kimchi may actually like this soup. Its smell is rather subtle in this soup although it gives a nice depth to the flavors. My husband doesn’t like kimchi and he will never eat it out of a jar, but he (said! he) liked this soup.

Kimchi soup with kale and meatballs: canola oil, kale, water, ginger, Chinese chicken base, gochujang, kimchi (both cabbage (chopped) and marinade), meatballs (garlic, ginger, ground pork, green onion, cilantro, soy sauce, sesame oil,egg, salt, pepper, canola oil), potato starch noodles, sugar, salt, pepper

キムチ入りのスープ～！

テリー、キムチはそのままでは決して食べないけれど、こうやって何かに混ざってると、食べてくれることがあります。

今回のこのスープも食べてくれましたよ～。

肉団子とケールとマロニー入りのこのスープ。

私的にもかなりヒットでした！

肉団子は先日餃子を作ったときに残ったタネに卵を加えて焼いたもの。

なので、肉団子も香菜たっぷり。

マロニーじゃなくって、ご飯を入れて雑炊風にしても美味しいだろうなあ。。。

ちなみに、ケールは本当に優れた葉野菜。

しっかり煮込んでも、いい感じに味も歯ごたえも残るし、この濃い緑色がなんとも身体に良さそうではないですか（笑）。

Sesame Wonton Soup

I boiled some of the cilantro pot stickers I made the other day instead of frying and put them in this soy milk soup. The soup was flavored with Chinese chicken base, ginger, and lots of toasted and ground sesame seeds. This soup is hearty and very satisfying!!

餃子入り胡麻豆乳スープ

先日作った香菜たっぷり餃子、焼かずに茹でたものを入れたスープです。

スープは、中華系のチキンスープを元に、生姜で味をつけた豆乳スープ。

仕上げにたっぷり胡麻と小ねぎを散らして出来上がり～。

しっかり味をつけた餃子だったので、優しい味のスープとよくあいました。

こちらの餃子の皮は日本のに比べると厚さがあるようで、茹でると特にもちもち感がでて美味しいですよ～。

スープは最近購入した薄青色のボウルに入れてみました。

白いスープはなかなかいい感じに映える？

Cilantro Pot Stickers

I was in a mood for pot stickers and last weekend I decided to make over 30 pot stickers. I did add pork but in my filling you’ll find lot of vegetables, such as cabbage. This time I also added lots of cilantro and it gave a great fresh flavor.

香菜たっぷり餃子

お正月は何を作ろう、と悩んだのですが、結局自分が一番好きなものを作ろう！、ということで、出来たのがこちら。

お正月から、餃子～！

ちょっぴり肉入りだけど、キャベツたっぷり、そして、今回は香菜もたっぷり入れました。

ニラもそうだけど、こういうちょっとクセのある野菜が入ると美味しいですね～。

キャベツの葉はさっと茹でましたが、食感がしっかり残るぐらいにしたのが、良かったです。

沢山作ったと思いましたが、ほとんど二人で完食しましたよ～。

中身が少し残ったので、こちらは肉団子にしました。

餃子は、我が家の場合、焼く前に写真を撮るのが必須。

というのも、上手く焼けないと、困るので（苦笑）。

今回は、沢山フライパンにくっついてしまったので（悲）、やっぱり写真、先に撮っておいてよかったです（笑）。

見かけはイマイチだったけど、味は良かったんですよ～。

（英語では、ポット・スティッカー、直訳すれば、鍋にくっつくもの、ですしね～（笑）。）

ちなみに、餃子のひだひだ、ある方のブログでは、ひだひだは３個が落ち着く、とおっしゃってましたが、人それぞれですね。

私は５個が落ち着きます。

I happened to have leftover ham and empty puffs at hand and decided to make lunch with them. Romaine lettuce, a ham slice, scrambled egg, and apricot mustard glaze (which I used for cooking the ham) were sandwiched in the puff. I’ve been recently enjoying this type of savory puff sandwiches (like this), and I now make extra puffs whenever I make cream puffs so that I can make sandwiches with them later.

ハムエッグのシューサンド

クリスマスの時に用意したハムがまだ少し残っているので、これを使ってサンドイッチ。

最近ちょっと気に入っているシュー皮ではさむサンドイッチ。

こんなのも以前作ってましたね～。

ロメインレタス（しっかりしゃきしゃきっと歯ごたえがあるレタスです）、厚切りハム、スクランブルエッグに、ハムに塗ったアプリコットマスタードグレーズもソースとしてかけちゃいました。

シュー皮ではさんだら出来上がり～。

今日のランチに作りましたが、テリーにも好評でしたよ～。

ちょいっと手でつまんだら、３口で食べれちゃいます。

スナック感覚ですね～。

日本は、年末ムードいっぱいでしょうね～。

３１日、１日と休みを取ったので、週末４連休なのは嬉しい～のですが、特に年末行事などもなくアメリカはいつもと全く変わらない週末です（笑）。

I came up with this breakfast idea when I wanted something sweet and savory. Like waffle and chicken. A poached egg, sauteed Canadian bacon, and kale are placed on pumpkin waffle, and then served with scallion maple butter made with scallion, maple syrup, butter, grated ginger, cayenne pepper, and salt. You’ve got everything you need for breakfast on one plate!

ポーチドエッグ on パンプキンワッフル

ちょっと和なものが続いたので、今回は洋な感じで～。

ポーチドエッグ、焼いたハム、炒めたケールを、パンプキンワッフルにのせた朝食です。

甘いものと、塩味のものが一緒になったこういうごはん、実は結構好きだったりします。

アメリカ南部では、フライドチキンをワッフルにのせて、バター、シロップで食べる、という（スゴイ）朝食がありますが、コンセプトとしてちょっと似てるかな？（カロリー的には私の朝食のほうがかなり低いですが（笑）。）

私は、シロップにもちょっと味をつけてみました。

おろした生姜、バター、カイエンペッパー、塩を、メープルシロップに混ぜてちょっぴりぴりっとした味をつけたら、たっぷりまわしかけて、いただきま～す。

Pork and Mango Soba Salad with Scallion Oil

Pork usually goes well with tropical fruits and the mango is not an exception! The combination of mango and soba might sound a bit different, but I love this dish and I know I’ll make this many more times this summer as long as I can get fresh mangoes. Serve this with hot and spicy scallion oil. The spiciness of the scallion oil and the sweetness of the mango are just so wonderful together!
