Taco Salad

Taco salad is one of my favorite Mexican dishes, and when the salad is served in a crispy shell, it’s even better. I have to go to a small Mexican restaurant in our neighborhood whenever I have a craving for taco salad in a shell. I was always wondering if there was any way I could create it at home. But I also felt deep-frying a shell seemed almost impossible to do at home. Then the other day I was shopping at a grocery store, and I found a package (AZTECA) that contained tortillas and paper patterns, and according to the instructions, you could bake taco shells instead of frying. I was a bit skeptical, but decided to try. It was a lot of fun and easy to make the hexagon shells, and once baked, they were perfect. I was afraid I would miss the flavor that comes from deep-frying, but surprisingly I didn’t miss anything. The baked taco shells were very satisfying. Terry liked it, too.

シェル入りタコスサラダ

タコスサラダは好きなんだけれど、特に、ぱりっと揚げたトルテイーヤを容器（シェル）にして出てくるレストランのタコスサラダがお気に入り。

コレがうちでも出来るといいのに、と思っていたものの、こんな形にしてしかもたっぷりの油で揚げるなんてうちでやるのは無理だなあ、とあきらめていたもの。

それが先日いつも行くスーパーでこんなものを見つけてしまった。

トルティーヤと六角形を作る紙の型紙入りで、説明によると、オーブンで焼くとのこと。

これならうちでも出来るわ～、ということで、早速試してみることに。

揚げものならではのあの風味が無いのが寂しいかなあ、と思ったものの、実際は、揚げたものとほとんど変わらない味。
テリーにも大好評、“揚げない分、ヘルシーだよね”、と。
確かに。

Grilled Chicken on Soy Bean Puree

From the bottom, pureed soybeans (edamame), grilled chicken (marinated first with lemon and rosemary), and alfalfa. These were served with lemon mustard sauce and chili sauce.

グリルドチキンと枝豆ピュレー

積み重ねる。
または、積み上げる。

と、ちょっとレストランっぽいおしゃれな盛り付けになるところが気に入っている。
高さを出す、って大切なんだなあ、と。

一種類のものを盛るだけの時も、こんもりとさせたり、飾りのハーブなんかをぽんと仕上げにのせて高さを出すとぐっと雰囲気が変わったりするしね。

本日紹介のコレも、ぽんぽんぽん、と、積み重ねたもの。

下から、枝豆のピュレー（マッシュポテト感覚で食べられる）、グリルドチキン（レモンとローズマリーでマリネしてからグリルしたもの）、アルファルファ。
ソースは、レモンマスタードソースとチリソース二種。

なんてことない献立の時も、こういう盛り付けにして、テリーに、“わあ～っ”、っと、歓声をあげられると嬉しいもの（笑）。

A weekend in Houston, TX

Last night I got back from Houston, TX, where Terry and I had enjoyed a wonderful weekend. The weather was absolutely gorgeous. It was dry and warm, but not too warm. We only had a few whole days to explore the city, but I feel like we got to see so many things that the city had to offer. I was able to go and see a rodeo live for the first time. It was very interesting. I now understand that it is not only a form of entertainment, but it’s rather a large part of the Texas culture. I was so tempted to buy all those beautiful western boots, belt, and hat to dress myself to be a cowgirl, but since I didn’t have any room left in my suitcase, I decided to just enjoy people-watching.

Terry and I stayed in the center of Houston downtown. After we explored the downtown area, we took a train and visited the museum district, where we enjoyed the Museum of Natural Science and a long walk. The following day we rented a car and ventured out to suburbs. We enjoyed antique window shopping in a historical railroad town, Oldtown Spring, sampling gourmet foods at Hubbell & Hudson Market in the Woodlands, and dining at a seafood restaurant in Galveston.

All the foods were great, too. The above photos are beef ribs from Papas BBQ (Texasize!), crab meat eggs Benedict from Shula’s Steakhouse in the Hyatt Regency Hotel, and tacos and tres leches cake from a Mexican restaurant ( I don’t remember the name of the restaurant) that we found in the museum district.

ヒューストンで過ごした週末

先週末はテリーと二人でテキサス州にあるヒューストン市で過ごして、昨夜月曜日の夜遅く家に戻った。

沢山美味しいものも食べたのだけれど、上手く写真が撮れたものが少なかったのが残念。

↑の写真、テキサスといったらやっぱりバーベキューでしょう、ということで。
このバーベキューは私が頼んだビーフリブ。
これ、なんと一人分。。。
この量に唖然としている私に、よそってくれたお姉さん、お皿を手渡しながらにやにや笑ってたし。。
テリーも、“フリンストンズ（原始家族の漫画）の肉みたいだね”、だって。
しっかり手でつかんでかぶりついていただきました（笑）。

二枚目の写真はクラブミート（蟹肉）のエッグベネディクト。
ホテルのレストランで食べた朝食。
たっぷり蟹肉がのったちょっと贅沢な一品。

次の二枚はメキシコ料理店で昼食に食べたタコスとデザート。
タコスは牛肉とサボテン入りなんてのもあって“本場？”メキシコ料理。
サボテンは細く切ってあって、緑色ということもあってか、ピーマンみたいな感じだったなあ。
デザートは私の好物の一つ、トレス・レチェス・ケーキ。
いわゆる、三種類のミルクに浸かったケーキ。
じゅわ～っとミルクがしみこんでいるのがたまらない。
このケーキ、一度自分でも作ってみたいと思っているのだけれど、なかなか、コレ！、というレシピが見つからない。

今回はたまたまロデオにも行く機会があって、私は、ロデオ初生観戦！
カウボーイが投げ縄したり（下写真）、荒れる馬に乗る時間を競ったり、というのを観戦するの、なかなか興味深かった。
訪れている人たちも、皆カウボーイ、カウガール風な装いで、出店でも沢山ウエスタンなものを売っていて、カウボーイ（ガール？）ハット（帽子）やらブーツやらに目がいってしょうがなかったけれど、ミネソタに戻ってきたらきっとかぶったりはいたりしないだろうなあ（苦笑）、という現実を思い出して、今回は見るだけ。
でもちょっと憧れる装い。
ぴちっとしたジーンズにカウボーイブーツにあの帽子、一度やってみたいなあ。

My sister and her husband eat very healthy. The great thing about their diet is that everything is homemade, they use seasonal ingredients, and they enjoy experimenting with various spices and herbs. So their foods are not only healthy but also very tasty and satisfying.

The inspiration for my Meatballs and Green Peppers in Japanese Ginger Broth came from my sister’s dish, Daikon Radish and Scallops in Japanese Ginger Broth.

Japanese ginger broth: water, hon-dashi(Japanese fish broth granule), soy sauce, brown sugar, ginger (both slices and grated)

肉団子とピーマンの生姜風味旨煮

姉の大根と貝柱の生姜風味旨煮の真似（笑）。

うちバージョンは先日作りだめしておいた肉団子とアメリカの肉厚ピーマンを入れて。

生姜はすりおろしたものとスライスしたもの両方入り。
汁はしっかり生姜の味がするし、さらにスライスしたものは肉団子と一緒に食べる。
生姜好きにはたまらない美味しさ。
我が家では久々の和料理。
やっぱり和ものってほっとする味。。。

This curry cream soup was made with garlic, ginger, onion, chicken base, milk, flour, butter, tomato paste, Indian yellow curry paste, and a little cranberry sauce from a can. I like to spice up my curry soup with lots of ginger.

肉団子入りカレークリームスープ

今日紹介の肉団子入りカレークリームスープはタイトルそのままのもの（笑）。
肉団子はごろごろっと大きめに作って。
スープは生姜たっぷり。
隠し味に甘酸っぱいクランベリー入り。
ほら、カレーにりんごを入れるような感覚（ってちょっと違うか（笑））。

カレークリームスープ：生姜、にんにく、玉ねぎ、小麦粉、バター、牛乳、インド系イエローカレーペースト（瓶入り）、トマトペースト、チキンベース、ブラウンシュガー、果肉入りクランベリーソース（缶詰）少し、塩、こしょう、小ねぎ

先日マフラーを作ったときに残った毛糸を使ってあるパターンの編み方を練習していたら、結構上手く出来たので、ムリヤリへアーバンドにしてしまった（笑）。
そうする予定で作り始めたわけではないので、かなり幅広。
ラズベリースティッチ、と呼ばれるこの編み方、ぽこぽこっとしたのが綺麗に並ぶところが可愛い。
見た目ちょっとレトロな感じ？？？

This chili was unexpectedly good. I had lots of shredded beef when our fridge was broken and we had to cook lots of large pieces of meat that were in the freezer before they would go bad. If this had not happened, I would not have thought about making chili using shredded meat instead of ground meat.

*My Bacon Sushi Rolls made it to the Top9 at Foodbuzz on February 9.

いつもとちょっと違うチリコンカン

チリコンカン、いつもはひき肉を使うのだけれど、今回は塊肉をさいて細かくしたものを入れてみた。

というのも、先日冷蔵庫が壊れたときに、冷凍庫に入っていた大量の塊肉を調理して、その消費に困っていたところだったので。

必要は発明の母（？）というけれど、これが意外に美味しくできて、テリーにも大好評。
こういうこともあるものね。。。
