Bacon Zucchini Pancakes

A friend in UK told me about the Norwegian bacon pancake; apparently people in Norway make pancakes with fried bacon inside. I thought it was very interesting, and I have since wanted to try. Yesterday I decided to do this, but I also added shredded zucchini. I had lots of zucchini I needed to use, but I also liked the idea of putting something green in my pancakes. It’s silly but it’s kind of nice to know that there is at least some vegetable on my plate (lol). I served these pancakes with butter and maple syrup. I know some people will find this (bacon and zucchini in pancakes) weird, but it’s fun to experiment in the kitchen and make something new and different. The texture of zucchini is a nice touch, and I always like the combination of sweet and salty (maple syrup and bacon in this case).

*By the way, my good friends from UK and Norway told me that the Norwegian bacon pancake is called “fleskepannekaker” (I hope I spelled it right!).

ベーコンとズッキーニ入りパンケーキ

栗原はるみさんが、家庭料理は連続ドラマのようなもの、と何かでおっしゃっていたのをいつも思い出す。

つまり前日の料理が次の日の料理の土台になったり、なんらかの形でつながっていく、ということ。

うちの場合、同じ役者（材料）が姿形を微妙に変えて、何日も続けて出てきたりするのが、ブログでもばればれ（笑）。
“またあの役者が出てるわ～”なんて思われないように、ちょっと面白い使い方をしたいといつも考えてしまう。

先日購入したズッキーニがなかなか無くならなくって、実はちょっとプレッシャーを感じていたところ。
で、昨日はなんと、パンケーキに入れてしまった！

北欧出身で現在はイギリスに暮らす友達から、ノルウェーではベーコン入りのパンケーキに砂糖をかけて食べるのよ、なんて先日教えてもらって、それ以来、実はこのベーコン入りパンケーキを試してみたいなあ、と思っていたところ。
で、今回ベーコンに加えて、細くシュレッドしたズッキーニも（消費のためと野菜をとるため）たっぷりと加えてやった。

ズッキーニ自体は味が主張をしないので、食感を楽しむ感じ。
ベーコンもなかなか悪くないかも。
この、塩っ辛いのと甘い組み合わせはもともと嫌いじゃないし。

私は砂糖をかけるのではなく、バターとシロップで。

テリーは今週末不在なので、多分、この記事を見て、ほっとしているはず。
ズッキーニ入りのパンケーキなんて言ったら、ぜったい顔をしかめると思うから（苦笑）。

ベーコンとズッキーニ入りパンケーキ：　ズッキーニはシュレッド、ベーコンは小さく切ってかりかりになるまで炒めたものを、パンケーキの生地に入れて焼く。

Last Sunday Terry and I had late lunch and we were not hungry until late at night. Terry suggested we order a pizza, but I decided to make pizza at home. It’s just so easy to make and we can put whatever we like on our pizza. Terry made a chicken BBQ pizza, and I made a　zucchini and pepperoni pizza.

Last week I bought a package of three zucchinis. I love zucchini but it has been a bit challenging to consume them by myself before they go bad (as Terry is not helpful at all). The zucchini pizza was not bad!

Zucchini and Pepperoni Pizza (toppings): zucchini, pepperoni, onion, red sauce, Louisiana hot sauce, mozzarella cheese, Parmesan cheese

ズッキーニとペパロニのピザ

日曜日は遅く昼食をとったこともあって、夜遅くなるまでおなかがすかなかった。

９時過ぎになって、ピザを作ることに。

今までだったらピザをオーダーしてるのだけれど、最近は家で作るのが簡単なことが分かったので、準備をするのも苦にならない。

時間がなかったので生地はほとんど発酵させなかったのだけれど、テリーも私も（特にテリーは）膨らまないかりっ、ぺたっとした薄～いピザが好きなのでオッケーということで。

ピザはいつもの作り方で作るとちょうど二枚分出来るので、それぞれ好きな具をのせることに。

で、私は、ズッキーニとペパロニのピザ。
テリーはもチキンバーベキューピザ。
テリーは私のピザを見て、“キューカンバー（きゅうり）ピザ”と言って恐れておりました（笑）。

ズッキーニとペパロニのピザ：　ズッキーニ、ペパロニ（少しスパイシーなサラミのようなもの）、玉ねぎ、市販のピザソース、ホットソース、モッツレラチーズ、パルメザンチーズ

Beef and daikon radish were braised with ginger, garlic, water, sake, soy sauce, brown sugar, a piece of star anise, a cinnamon stick, a bay leaf, salt, and pepper. The sauce was thickened with corn starch right before serving.

牛肉と大根のスパイスとろり煮込み

大根が最近では近くの普通のスーパーで売っているので、煮物でも作ってみることに。

やっぱり醤油味の煮物ってほっとする味。

今回は少しスパイスを入れたので、ちょっと中華風、って言っていいかな。
八角、シナモンスティック、ベイリーフ、生姜、にんにくを醤油と砂糖、酒、水に加えて煮込んでみた。

仕上げに、これまた普通の煮物ではやらないと思うんだけれど、コーンスターチで少しとろみをつけて。
最近は煮物の煮汁でさえ、こうやってちょっとぐらいとろみがないと物足りなくなってきている。
というわけで、出来上がり見た目はちょっとビーフシチュー風（笑）。

おいしゅうございました。。。
あまりに気に入って、３日続けてご飯のお供となった次第。

I grill a lot of things, and grilling steak is always a lot of fun. When I can get nice grilling marks on the meat, that makes me really proud! I marinated a steak in a mixture of oyster sauce, pineapple juice, garlic powder, soy sauce, and salad oil overnight, and grilled the next day for dinner. I served the steak with grilled asparagus.

一晩マリネ、グリルステーキ

一晩マリネ液につけたステーキをグリルしたもの。

牛肉にきれいに焼き目がつくと、ガッツポーズをしたくなるぐらい嬉しくなる（笑）。

これまたグリルしたアスパラガスをつけあわせに。

マリネ液：オイスターソース、しょうゆ、パイナップルジュース（缶詰）、ガーリックパウダー、サラダ油


Terry’s mom and sister brought us these beautiful lilacs yesterday! Lilac is definitely one of my favorite flowers. The blue/purple color is so sophisticated and they smell wonderful! Thank you, Bonnie and Nancy!
義母と義妹が昨日こんなきれいなライラックの花を持ってきてくれた。
香りも素敵なんだれど、この青紫色がなんとも上品で大好きな花の一つ。

My First Successful Meatloaf
初めて成功！ミートローフ

Meatloaf is one of Terry’s favorite dishes. I’ve made a few without much success in the last five years we’ve been married. Now I’m happy to announce that I just made a meatloaf that Terry and I both loved! I took an idea from Bobby Flay’s recipe and brushed a mixture of ketchup and balsamic vinegar on top of my meatloaf, which added a great flavor and a nice crusty texture. I also sneaked in some green vegetables (zucchini and green pepper) and felt pretty good about it (knowing there were at least some vegetables on the plate).

My First Successful Meatloaf: ground beef (1lb), ground pork (1lb), cooked onion, garlic, zucchini, and green pepper, 2 eggs, about 2/3cup Italian bread crumbs, dried thyme, ketchup, Worcestershire sauce, salt, pepper, glaze and sauce (ketchup and balsamic vinegar)

初めて成功！ミートローフ

ミートローフはテリーの好きなものの一つ。

ミートローフなんてひき肉を型に入れて焼くだけ、簡単簡単、と思っていたのに、ここ数年過去に幾度か挑戦したものの、“美味しい！”と自分で納得できるものが出来ずにいた。

今回はあまり深く考えずに適当に作ってみたら、コレが今までで最高の出来、ハハっ（苦笑）！
ミートローフなんて、ハンバーグと同じようなもの、と勝手に今まで思っていたけれど、違うのね～、今回改めて思ったわ。
外はかりっと、中はし～っとり（ちょっとパテを思わせるような）。
ケチャップとバルサミコ酢を混ぜたソース（これはボビーフレイというシェフのアイデアを借りて）を表面に塗って焼いた後、食べる時にもソースとしてかけていただく。
テリーにも大好評！
実は、こっそりズッキーニとピーマンも小さく小さく切って入れてやったのも自分ではかなり高得点だと思ったのだけれど、テリーは“ズッキーニは無いほうがいい”って。
言うまで気づかなかったくせに～（笑）！

初めて成功！ミートローフ：　１パウンド（４５０ｇ）牛ひき肉（ＢｅｅｆＣｈｕｃｋ）、1パウンド（４５０ｇ）豚ひき肉、卵2個、3分の2カップぐらいパン粉、炒めた野菜（たまねぎ、にんにく、ズッキーニ、ピーマン）、ケチャップ、ウォーセスターシャーソース（又はウスターソース）、ドライタイム、塩、こしょう、照りソース（ケチャップ、バルサミコ酢）

Grilled Sushi!

In case you are wondering if people in Japan grill sushi like this, the answer is “no”. This is totally my own idea. Well, I love anything grilled, and I thought why not grilling sushi. Think outside the box, right? Inside of this sushi were cooked chicken, red pepper, cooked eggs, and zucchini. I brushed each piece with a little sesame oil and grilled on a grill pan. I drizzled a mixture of sweet chili sauce and mayonnaise, and served with sesame soy sauce (a mixture of sesame oil and soy sauce). Wasabi soy sauce or teriyaki sauce would be great, too.  Terry usually eats only one or two pieces when I make regular sushi rolls, but he ate four pieces of this grilled version. It’s a good enough reason for me to keep grilling!

グリル巻き寿司

最近グリルパンを使ってグリルをするのが楽しくってしょうがない。

上手く焼き目がつくと嬉しくなるし、グリル独特の風味が出て何でも美味しくなる気がするから。
グリルパンも使い込んでいくうちに味わいが出てきた感じ。

で、今日はちょ～っと変わったものを作ってみた。

グリル巻き寿司！！

あらかじめ火が通った鶏肉、甘めの卵焼き、ズッキーニ、パプリカを入れて巻いた寿司を切ったら表面に胡麻油をさっと塗ってグリル。
仕上げに、スイートチリマヨ（スイートチリソースとマヨネーズを混ぜたもの）をかけて出来上がり。
このスイートチリマヨがかかったのを、さらに、胡麻油と醤油を混ぜたものにつけて食べる。
胡麻油好きなテリーにはこれが好評。
もちろん代わりにわさび醤油や焼き鳥のたれみたいな甘辛いたれで食べても美味しいはず。

グリル寿司と聞いて、“へっ？”と、目が点になった人にも（笑）オープンマインドでぜひ一度試してもらいたいもの。

テリーは普段の巻き寿司は一つか二つつまむだけなのだけれど、このグリルしたものは、四つも食べてくれたしね。
