Southeast Asian Capellini with Turkey and Mango

This is my most recent crazy(! or odd?) creation that I fell in love with. The idea of combining mango and noodle came from the cookbook, called “Plenty: Vibrant Recipes from London’s Ottolenghi” by Yotam Ottolenghi. There was a recipe where he was using mango in his soba noodle dish, and I found it very interesting.

Here is my version of mango noodle dish. Ground turkey was cooked and seasoned with green onion, ginger, hoison sauce, soy sauce, salt, pepper, and crushed red pepper. This seasoned ground turkey and napa cabbage mango slaw were both placed on top of cooked capellini. I loved the layered Southeast Asian flavors from Hoison sauce, mint, cilantro, and ginger.

鶏挽肉とマンゴーのせエスニックアジアンカペッリーニ

最近作った変なもの（！）だけどとっても気に入った一品がコレ。

エスニックアジアンカペッリーニ白菜マンゴースローのせ。

タイトル、長っ。

先日図書館で借りた本の中に、蕎麦とマンゴーをあわせたレシピがあって、それ自体は作りたいと思わなかった（苦笑）んだけれど、アイデアは面白いなあ、と思っていて。。。

適当に冷蔵庫にあったものと、先日作った白菜マンゴースローを使って、できたのがコレ。

Hoison ソース（海鮮醤）や生姜で味付けした鶏挽肉と、白菜マンゴースローを茹でたてカペッリーニにのせただけ。

少し甘くって、少し辛くって、少しミント味、少し香菜味、少し生姜味、少し酸っぱくって、少しフル―ティ―、というエスニックアジアンな味の重なりが個人的にかなり好み。

Pasta Salad with Maple Pumpkin Mayo

I’m usually all for fresh vegetables and fruits. But I do like to use certain canned food, and pureed pumpkin is one of them. It’s easy to use and I don’t think there is much compromising in the flavor. I had a little leftover canned pureed pumpkin the other day. So I decided to use it to make “pumpkin mayo”, by mixing it with mayonnaise. I also added some maple syrup. Cooked farfalle, chicken, and chopped onion were mixed with this maple pumpkin mayo, salt, and pepper. Paprika was sprinkled generously on top. I know maple syrup in salad may sound strange, but the little sweetness combined with saltiness and spiciness actually tasted very good.

メープルパンプキンマヨ和えパスタサラダ

たいていは缶詰ものより生のものを選ぶのだけれど、お気に入りの缶詰商品がいくつかある。

トマトの缶詰はソースやスープ作りには必須だし、豆類もすぐに使えるのが簡単なので缶詰を買うことがほとんど。

そして、かぼちゃのピュレー缶詰もこの時期とっても役に立つので常備している。

このパスタサラダはそんなかぼちゃピュレーを使ったもの。

かぼちゃピュレーはマヨネーズに混ぜて、さらに、メープルシロップを加えたら、茹でたパスタ、焼いて裂いておいたチキン、小ねぎとあわせて塩こしょうしたら出来上がり。

仕上げにたっぷりとパプリカを振り掛けるのが重要ポイント。

サラダにメープルシロップ？と思われるかもしれないけれど、甘い、辛い、塩辛い、が混ざった複雑？な味わいがなかなか病み付きになる。。。
