Sake Kasu Chicken Soup

Sake kasu is sake lees that is left over from sake production. Basically this is the mash out of which the sake has been pressed. Sake-kasu is used for a variety of things in Japan, from marinade to cookies, to soup flavoring. Terry and I ran into a surprise sake-kasu dessert a few months ago, at moto-i restaurant that claims to be the first sake brewery restaurant outside of Japan. They were serving sake kasu gelato, and it was absolutely delicious!! Who would have thought sake lees could be made into such a sophisticated dessert! And I don’t even drink sake! After tasting this wonderful sake kasu gelato, I had to have sake kasu myself. It’s hard to find it here in the US as you can imagine. But I was lucky to find freeze dried sake kasu at amazon online store in Japan. The first thing I made with my sake kasu is this chicken soup. The unique sake kasu flavor is just wonderful in the soup, too. I wish I could explain what it tastes like, but it’s difficult as there isn’t anything else I can think of that is similar to it, other than saying it definitely has some sweet sake flavor.

花パスタ入り酒粕チキンスープ

酒粕なんて長年まったく興味がなかったのに先日ミネアポリス市内に新しくできた酒造レストラン、“moto-i” （日本以外では初の酒造レストランらしい）、で出てきた酒粕ジェラートなるものに感動して、どうしても酒粕を手に入れてみたくなった。

アメリカで酒粕なんて手に入れるのはムリだわ～、とあきらめかけたときに、アマゾン・ジャパンにてフリーズドライ酒粕！なるものを発見。

生のものはダメだけれど、フリーズドライになっていれば日本から送ってもらえる、と思い早速注文。
まずは日本の実家に送ってもらってそれを母にアメリカまで送ってもらった。

酒粕を使っての第一弾は、チキンスープ。

酒粕ジェラートに大感激だったテリー、この酒粕チキンスープも絶賛！
あの独特の風味がなんともいい味を出してくれるのよね。

スープの具は、チキンの他には、玉ねぎ、にんじん、セロリ、ケール、そして、花の形のパスタ。
仕上げにクラッシュドレッドペッパーで少しぴりっと。

このパスタちょっと前にターゲットという店で見つけたもの。
きれいな花形が可愛い～。

Leftover Turkey Zosui (or Japanese Risotto)

After eating so much yesterday I didn’t think I wanted to eat any turkey today, but this is what we had for breakfast this morning: turkey zosui. Zo-sui is a Japanese style risotto. For zo-sui you don’t cook rice in soup but you add cooked rice to the soup. Eggs are often added at the end. I used turkey bones from yesterday to make the soup, but I also added garlic, ginger, and Chinese chicken base for additional flavors. My plan was to make the soup red-colored by adding garlic chili paste, but the soup became quite spicy before I could add so much. Although it did not even turn to pink, this soup was nice and spicy and very tasty.

Leftover turkey zo-sui (or Japanese risotto): salad oil, garlic, ginger, cooked turkey meat, turkey bones, water, Chinese chicken base, garlic chili paste, cooked rice, salt,  eggs, green onion

七面鳥の残りでピリ辛雑炊

昨日の感謝祭で残った七面鳥のローストで、今朝は雑炊。

身をこそげた骨も捨てずにとっておいたので、それを入れてダシとり。

さらに中華系のチキンベースを入れて、生姜、にんにく、ガーリックチリペースト、塩でさっぱりピリ辛な味付け。

ご飯を入れたら、卵を割り入れ、小ねぎを散らしたら出来あがり。

本当はチリペーストでもっと赤い色にしたかったんだけれど、赤くなるどころかピンクにさえなる前にかなり辛くなってしまった（苦笑）。

ぽかっと身体があたたまったよ。

やわらかい黄身をつぶしてご飯にからめながら食べるのが美味しかった～。

ちょっと辛めの汁ものを食べたくなったのは、朝一番にstudio r でスンドゥップ チゲなるものを拝見したため。
こちらは本場韓国の味！という感じ。
ぜひいつか試してみたいなあ。
