Veggie Tempura Sandwich
More and more restaurants have started adding “healthy” food choices to their menu the past several years.
That is good.
However, it’s really hard to find “healthy” foods that I like.
I think this is often what happens…
When they are told to make a “healthy” version of their original food, they simply take meat and whatever they think is “unhealthy” out of the original recipe, and serve it as the “healthy” choice.
So they end up with extremely boring and flavorless food…
I’ve seen a “healthy” sandwich that contains a few layers of iceberg lettuce, a few slices of tomato, dried-up sprouts, served with “low-fat” mayo…
This is why I don’t like to use the “h” word, because many people seem to associates the “h——” food with boring and flavorless food.
Now don’t get me wrong. I’m not claiming that my vege tempura sandwich is a “h——” sandwich.
There is tempura and it’s deep-fried!
But in this sandwich there are lots of vegetables, it’s plenty flavorful, and it’s fun! And it’s mostly plant-based. Personally, this is something I would choose and enjoy eating.
The inspiration for this sandwich came from the soft-shell crab sandwich. I don’t know why. But this vege tempura kind of looks like a crab with carrot “legs” sticking out, doesn’t it (lol)?
Veggie Tempura Sandwich (2 sandwiches)
veggie tempura
– 1/4 onion, sliced
– 1/2 carrot, cut into julienne
– 8 leaves shiso (Japanese basil or 10~12 sweet basil leaves)*optional
– tempura batter (3/4 cup all purpose flour, 1/4 cup corn starch, 1/4 cup cold water, 4~5 ice cubes)
– canola oil (frying)
– salt
2 whole wheat buns
1 tablespoon mustard
2 leaves romaine lettuce
1/2 tomato, sliced
1/2 avocado, sliced
spicy mayo (mayonnaise, lemon juice, Louisiana hot sauce)1. Add onion, carrot, and shiso (or basil: optional) to the tempura batter. If the batter becomes too watery, add corn starch and flour.
2. Heat oil in a pan. Fry the vege tempura for 3~4 minutes, until crispy and golden brown.
3. Salt the tempura.
4. Spread mustard on the buns.
5. Place lettuce, tomato, avocado, and the tempura on the bottom bun.
6. Serve with spicy mayo.
Plant based?: Mostly! If served on vegan buns without the spicy mayo, then yes 100%!

かき揚げを、バンズにはさんで、バーガー風にしてみました~。
かき揚げは、玉ねぎと人参に、青紫蘇の千切りも忍ばせました。
コレがやっぱり美味しい~!
レタス、トマト、アボカド、マスタード、そして、仕上げに、ピリ辛レモンマヨ。
イメージ的には、ソフトシェルクラブのイメージで、作り上げました。
なんだか見た目にもクラブ(カニ)っぽく見えなくもない(ちょっと無理やり(苦笑)?)!

Pork Cutlet Sandwich
Pork cutlet sandwich or “katsu-sando” is a popular sandwich in Japan. So when I made the cutlets last weekend, I had to make this sandwich for lunch. I hadn’t had it for a long time, probably since I left Japan. This sandwich is very tasty and satisfying. Try “tonkatsu” sauce if you can find it at a Japanese grocery store.
Pork Cutlet Sandwich: toasts, pork cutlets, tonkatsu sauce, coleslaw (Brussels sprouts, mayo, Dijon mustard, sugar, salt, pepper)

先日沢山トンカツを作った時にどうしても食べたかったのが、コレ。
カツサンド~!
ホント久しぶりに食べました。
何でも揚げるのが好きなアメリカ人(笑)ですが、豚肉はバーベキューになることが多く、いわゆる日本のようなトンカツに出会うことってあまりないんですよね。
なので、カツサンドなるものにも出会いませんね~。
トーストしたパンに、揚げたてのトンカツ(とんかつソースをしっかりかけました)とマスタードをぴりっと利かせたマヨドレッシングであえたキャベツ(今回はたまたまあった芽キャベツを使いました)をたっぷりとはさんでみました。
“あまり肉が沢山のはちょっと”、と言っていたテリーも、美味しい、と食べてくれました~。
カツサンドって、中学生男子用のがっつりランチ、と思ってましたが、こんな風に野菜たっぷりにすると女子にも良いですね~。

Curry Marinated Portabella Pita Sandwich – Vegan
I was so excited about my first homemade tamarind chutney, and I wanted to use it for something. As I said in the previous post, anything tastes better with this chutney, but this time I decided to use it for my pita sandwich. I marinated portabella mushrooms in currty marinade to keep the Indian flavor theme. The marinated mushrooms were then broiled in the oven and stuffed along with arugula in pita pockets. Of course I didn’t forget to generously drizzle tamarind chutney and cilantro sauce!
Curry marinated portabella pita sandwich: portabella mushrooms, curry marinade (canola oil, white vinegar, curry powder, cane sugar, salt, pepper), , hummus, pita bread, arugula, tamarind chutney, cilantro sauce (cilantro, green onion, cooked garlic, canola oil, white vinegar, cumin, lime juice, cane sugar, salt, pepper)

カレー味きのこピタサンド
先日作ったタマリンドチャツネがあまりに気に入ってしまって、コレをすぐ使って、こんなピタサンドイッチを作ってみました。
インド風味で統一することにして、ポータベラという大きいきのこをカレー味のマリネに漬け込んでから焼いたものを、自家製ピタパンに詰めて。
フムス(ひよこ豆のペースト)とルッコラをたっぷり入れたら、タマリンドチャツネと、香菜ソースををたら~りとかけて出来上がり~!
コレ、超美味しかった~!
沢山作りすぎたかな、と思ったチャツネ、なんだかんだとすぐになくなってしまいました。
シンプルに、野菜スティックにつけるだけでもいけますよ~。

Blueberry Salad Pita Sandwich – vegan
I love blueberries. Okay, I confess blueberries are probably my favorite berries of all! They taste so good fresh that I almost feel sad when they are found in baked goods. I always keep a pint of blueberries in our fridge and I just grab a handful when I want a snack. Last weekend I wanted to make a pita sandwich with my homemade spinach pita bread and the idea of stuffing lots of fresh blueberries in the pita bread made me so excited. You don’t need any heavy ingredient like mayo for this sandwich. This sandwich screams FRESH when you have your first bite.
Blueberry Salad Pita Sandwich: pita bread (I used homemade spinach pita bread), spinach, sliced avocado, blueberry salad (fresh blueberries, grapefruit, sliced red onion, chopped mint, chopped parsley, mustard dressing (Dijon mustard, white vinegar, sugar, salt, pepper))

ブルーべりーサラダ入りピタサンド
ブルーベリー、多分ベリーの中で一番好きなベリーだと思います。
そのまま食べるのが一番美味しいので、毎週のように買ってきては冷蔵庫に常備して、スナック代わりに、手ですくっては食べています。
生のものがあまりに好きなので、焼き菓子に入れるのは躊躇するぐらい。
で、週末、最近作るのが楽しくってよく焼いているピタパンを使ってサンドイッチを作ろうと思ったのですが、
その時に、たっぷりブルーべリーを入れたらおいしそうだな、と。
ブルーベリー、グレープフルーツ、赤玉スライスをハーブ(ミント、パセリ)のたっぷり入ったマスタードドレッシングであえたら、ほうれん草、アボカドと一緒にほうれん草ピタパンにはさんで出来上がり。
じゅわ~っとフレッシュな味が口の中に広がります。
ミネソタ、夏休みがもうすぐ終わる、というここに来て今週は激暑。。。
地域に寄りますが、ほとんどの学校は、9月の二週目から始まります。
暑い夏の日にこんなランチはいかがでしょう~。
それにしても、ピタサンドイッチって写真を撮るのが難し~い。
まずまっすぐに立ってくれないし、向いてほしい方に向いてくれないし。。。トホホです。。。
あまりに納得がいかないので、今回はちょっと激しく写真加工してみました~(笑)。
