Carol & Kayla’s Lasagna
June 17, 2011

Terry’s sister, Carol, and her daughter (our niece), Kayla, are visiting the family here in Minnesota from Arkansas this summer. It’s great to see them again. The first thing Carol asked me was if I would let her use our kitchen one night so that she could cook for us! My answer was, of course, “YES!” Carol and Kayla made dinner for Terry and I last Friday. I know we probably should host a dinner night for the guests, but this was Carol’s idea to make her famous lasagna because she knew that it’s Terry’s favorite. Terry and I both love lasagna, but I don’t make it very often. So this was such a nice treat for us. Those many steps you have to take in the process of making lasagna intimidate me, and actually I’ve probably made lasagna only once or twice in my life. Anyway, the lasagna Carol and Kayla made for us was DELICIOUS!! An interesting thing is that I love their lasagna that contains lots of cottage cheese and ricotta cheese, both of which I usually don’t care for. I learned a lot from watching them cook, so maybe I can replicate this lasagna, or at least something close to it, sometime soon (hopefully…).

Tofu and Ground Beef Curry with Couscous
May 17, 2011

It’s so easy to make curry when you use the Japanese curry paste. I usually use bite-sized meat or sliced meat for Japanese curry, but this time I decided to use ground beef. Terry and I really liked this ground beef curry. I don’t know why I never tried this before. Couscous was cooked in chicken stock with a little turmeric (which made the couscous bright yellow-colored), and it was mixed with chopped craisin and fresh jalapeno pepper.
