Curried Shrimp Puffs

I like cream puffs and when I made some this weekend I had some leftover puffs. So I decided to make these savory puffs for snack today. Curry flavored shrimp and corn salad was stuffed inside the puffs in place of sweet cream. These shrimp puffs are light and tasty! This can be served with soup for lunch, too.

Curried shrimp and corn salad: boiled shrimp, celery, corn, green onion, mayonnaise, curry paste (store-bought), sugar, salt, pepper

この週末に、久しぶりにシュークリームを作りました。

シュー皮が少しあまってしまったので、今日はスナックに、こんなものを作ってみました。

カレー味に味付けした海老とコーンのサラダをたっぷりシューに入れたもの。

パンにはさむサンドイッチに比べると、ず～っと軽いので、ぱくぱくといくらでも食べられてしまいます（笑）。

海老サラダは、セロリをたっぷり入れるのが個人的に好み～。

海老のカレーサラダ：茹でた海老、セロリ、小ねぎ、コーン、マヨネーズ、カレーペースト(市販）、砂糖、塩、こしょう

As soon as I saw the idea of shiso tempura at this site, I couldn’t wait to try it myself! They were putting tuna inside the shiso leaves, but I decided to use shrimp instead. Roughly chopped shrimp was mixed with salt, corn starch, ginger, and chopped green onion. It was sandwiched in two shiso (or Japanese basil) leaves and the whole thing was made into tempura. This is absolutely delicious and a great way to enjoy the unique shiso flavor.

紫蘇の海老挟み天ぷら

紫蘇の葉二枚に、海老のすり身（生姜、小ねぎ、片栗粉、塩）を挟んで、天ぷらにしてみました。

似たようなものをこのサイトで見つけ、グッドアイデア！、と思ってすぐにやってみたくなったもの。

つい最近日本食料品店で、沢山紫蘇も買ってきたことだしね。

見つけたサイトでは、マグロとマヨネーズをあわせたものを挟んでましたが、私は海老を使って。

海老は荒いすり身にしたので、出来上がりはぷりっと感も残って、と～っても美味しかったです！

中をシンプルな味付けにしてあるので、紫蘇の味もしっかり味わえて、上品で美味しいスナック。

何もつけなくって、このままでぜひ試していただきた～い。

次は何を挟もうか、考えるのも楽し～い。

紫蘇はもうすぐなくなりそうなんだけどね（残念）。。。

When Terry and I stopped at our favorite co-op in Minneapolis, I found this beautiful smoked herring. It was so cheap (it was less than $2 for a whole medium-sized fish) and I had to buy it. The smoked herring was served with short pasta and pesto cream sauce. The diced tomato on top is for adding the color and also some fresh taste.

pesto cream sauce: canola oil, flour, soy milk, pesto (basil, walnuts, cooked garlic, olive oil, sugar, salt, pepper), salt, pepper

にしんの燻製とバジルクリームソースのパスタ

ハイ、久しぶりに、魚、入ってます～！

先日ミネアポリス市内にある大好きなＣｏ－ｏｐ（生協）に行ったら、美味しそうなにしんの燻製があって、しかもものすごく安かったので、ついつい買ってしまいました。

どうやっていただこうか、と迷ったのですが、パスタとあわせることに。

茹でたてのショートパスタに、このにしんの燻製、そして、バジルクリームソース。

仕上げに、トマトの小さい角切りをのせました。

彩りもありますが、このトマトがフレッシュな味を出してくれて美味しいんです。

When we tell our friends and family we’ve switched to the 95% plant based diet, they often look confused and say, “Then what do you eat???” We eat lots of vegetables, fruits, mushrooms, beans, rice, lentils, nuts, seeds, tofu, seaweed…. And we are not eating only salad (lol)! (I think many people seem to automatically picture us eating a big bowl of lettuce three meals a day). And as I said, we give ourselves 5% wiggle room where the food does not have to be plant based (although most of the meals I prepare at home has been rather close to 100% plant based). Here is the red coconut curry I made a few weeks ago. Langoustine is apparently our 5% non plant food in this dish (lol).

アカザ海老入りレッドココナッツカレー

アメリカでは、ラングスティン、と呼ばれますが、日本名は、アカザ海老、だそうです。

写真で見えてる小さい海老のようなもの。

レッドココナッツカレーに入れてみました。

普通の海老とはまたちょっと違った味と食感が楽しめます。

お気に入り、ピンクのラインが入ったお椀に入れて。。。

Your usual salad can be fun when presented in a different way! Poached salmon and quinoa were served on a romaine boat. When Terry first saw this, he thought it was too much lettuce (a half head), but he actually had no problem eating the whole thing. Terry also gave me a big compliment on the lemon mustard dressing I made for this dish. The secret of this dressing is using preserved lemon!

Salmon and quinoa on romaine boat: poached salmon, quinoa, red onion, green onion, dry cranberries

Lemon mustard dressing: chopped preserved lemon, dijon mustard, white vinegar, agave syrup, salad oi, salt, pepper

レタスを半分に切ったものにサーモンとキノアをのせたもの。

一皿で十分なランチになります。

レタスはロメインレタスというこちらでは人気のレタス。

細長いレタスです。

白いところや薄緑色のところが美味しいです。

シーザーサラダはこのロメインレタスを使うのが定番ですしね。

しっかりとした葉がしゃきしゃきとしていてちょっぴり甘さがあるところも人気の秘密なんでしょうね。

今回は小さく切らずに、半分に切ってどど～んと豪快にお皿に盛ってみました。

これをはじめ見たテリー、ちょっとレタスが多すぎるかも～、なんて言っていたのに、ぺろっとあっというまに食べ終わってました（笑）。

今回これ用に作ったレモンマスタードドレッシングがこれまたテリーに大好評！

自分用の覚書のためにも材料を書いておきますね。

このドレッシングの美味しさの秘密は、プリザーブドレモンと呼ばれる、塩漬けレモンを使っていること。

私はSur la tableというキッチン専門店で売っていたモロッコ産の瓶入りのものを使いました。

日本でも輸入食用品店で売ってるかな？？？

レモンマスタードドレッシング：プリザーブドレモン、ディジョンマスタード、酢、アガベシロップ（または砂糖）、カノーラオイル（またはサラダ油）、塩、こしょう

Terry and I have been gradually moving toward healthy eating, and one of the things we have been doing recently is switching from white to dark food. I use brown sugar more often, we eat brown rice instead of white rice most of the time, and we almost always choose whole wheat bread over white bread. However, when it comes to pasta, I had a hard time switching to the whole wheat pasta. The first few times I tried, I wanted to like it, but I couldn’t. So I took a break and I tried not think about whole wheat pasta for a while. The other day I decided to give whole wheat pasta another try and made this pasta. I don’t know what it was, but I actually didn’t mind this time. It could be because of the brand of the pasta I used and I might happen to like the particular brand or it could be me just getting used to the overall whole wheat flavor. Anyway, here is the whole wheat past dish I enjoyed.  The freshly cooked pasta was served with ratatouille, sardines, and basil.

ラタトウイユとサーディンのせ全粒粉パスタ

最近は身体に良いから、ということで、白いものから色の濃いものに食べ物は切り替えるようにしてます。

白米より玄米、白い食パンより全粒粉のパン、砂糖もブラウンシュガーを使うことが多かったり。

それが、なぜか全粒粉のパスタはあの味と食感が苦手で、少し遠のいてました。

今回、ちょっと時間を空けたので、もう一度試してみたのですが、今回は今までに比べて美味しく食べられました～。

ブランドが良かったのか、私がこの味に慣れてきたのか？、わかりませんが、まあ、少しずつまた全粒粉パスタも食べていきたいなあ、と思います。

今回は、ラタトウイユと缶詰のサーディン、バジルをのっけたもの。
