Smoked Salmon Chirashi Sushi

A few leftover dishes from our new year lunch box were put together to make a tasty chirachi sushi. Smoked salmon and pickled radish and some additional chopped fresh dill were mixed into sushi rice (Japanese rice with vinegar, sugar, and salt), and served with a sprinkle of egg yolk mimosa. The pink-colored radish and smoked salmon, and yellow egg yolk give this dish some festivity.

There are several different kinds of sushi, as sushi really just means sushi rice: Japanese rice mixed with rice wine vinegar, sugar, and salt. For instance, when a slice of fish (usually raw but some cooked) or other things are placed on a small bite-sized rice, it’s called “nigiri-zushi(sushi)”. When fish or other things are mixed in sushi rice like this dish here, it’s called “chirashi-zushi(sushi)”.

スモークサーモンのちらし寿司

またまた、新年ランチの残りものを使っての一品、スモークサーモンのちらし寿司。

スモークサーモンと酢漬けラディッシュをたっぷり入れて、さらにフレッシュなディル（ハーブ）を刻んで入れたら、仕上げに、ゆで卵の黄身の部分を粗いざるを通してミモザ風？にかけたら出来上がり。
好みで、刻み海苔をのせてもいい。

今回はちらし寿司にあわせて、ちゃんと味噌汁なぞも作ったりして。

お正月気分も残っていることで、盛り付けも和風で。

スモークサーモンとラディッシュのピンク色が、おめでたい雰囲気を出してくれたような。

この箸置きは数年前私達の結婚祝いに日本の友人がお祝いに送ってくれたもの。
いくつか色違い柄違いのものがある中で、コレは、新春を思わせる華やかなところがお気に入り。
早く春、来ないかなあ。。。

Anchovy and Leek Carbonara

Yes, anchovy again! I know I had a pasta dish using anchovy not so long ago. I opened a can about a week ago, but it’s not very easy to use up a whole can of anchovy, because you really need a little bit to enjoy its flavor. Chopped anchovy and leeks were added to my usual Pasta alla Carbonara recipe. I only use egg yolk, not egg white, for my Carbonara, but I do use heavy cream, which I heard Italians do not do traditionally. Lots of Parmesan cheese is a must! For Terry I replaced anchovy with bacon, and he loved it.

アンチョビと洋ネギ入りカルボナーラ

先日開けたアンチョビの缶、全部使いきれなかったので、残りを使ってパスタ。

今回は洋ネギと一緒に、カルボナーラ。

私はカルボナーラ、卵黄、生クリーム、パルメザンチーズで作るのが好き。

本場では、生クリームは入れないそうだけれど、私はついクセで入れちゃっている。

夫に、“アンチョビはやっぱりヤだ？”と聞くと、”ヤダ”、と言うので、夫用には、アンチョビの代わりにベーコンで作ってあげたら、絶賛してくれた（笑）。

夫、昔は、卵は何でもしっかりしっかり火が通ったものじゃないと嫌がったくせに、最近は、オムレツでもポーチドエッグでも、目玉焼きでも、卵は半熟ものも食べられるようになってきたよう。
っていうか、今ではそのほう好きらしい。
だからカルボナーラもスクランブルエッグみたいにしなくっていい（笑）。
“君のと同じように作って”、と言ってくれるのはやっぱり嬉しい。
アンチョビはまだ食べられないけど（苦笑）。。。

Broccoli and Anchovy Pasta

Mix cooked pasta with cooked broccoli, chopped anchovy, chopped and cooked garlic, lemon zest, grated Parmesan cheese, and olive oil. Salt and pepper. Squeeze fresh lemon juice right before serving.

I like anchovy, but it’s not a popular ingredient here in the states unfortunately… I find its unique and strong fish flavor very tasty.

ブロッコリとアンチョビのパスタ

アンチョビのあの独特の味が美味しいと思うのは、魚の国（笑）で育った人じゃないと理解しがたいものかもしれないなあ、なんて思う。

というのも、アメリカではアンチョビって一般的にあまり人気がない食材な気がするから。
缶詰アンチョビのあの姿を見て、さらに匂いをかいだら、“ウエ～っ”って顔をする人が多そう（苦笑）。
夫も自ら好んで食べたがらないものの一つ。
で、これは一人ランチ。

茹で立てのパスタに、アンチョビをみじん切りしたもの、いためたにんにく、ゆでたブロッコリ、レモンの皮をおろしたもの、パルメジャンチーズ、オリーブオイルを混ぜ、塩こしょう。
食べる直前にレモン汁をきゅっと絞って。
