Tri-Color Breakfast Sandwich
I say this all the time in this blog.
So, some people might be tired of hearing it, but I say this again.
It’s hard to get vegetables for breakfast.
When you go out for breakfast, your plate usually gets filled with eggs, some kind of meat (most likely sausage or bacon), some type of bread or baked goods, and maybe some potatoes….
You can order an omelette and ask to add vegetables, but they don’t amount to much.
So, when I make breakfast at home, I am on a mission to put as many vegetables as possible on our plates.
In this sandwich you will find eggs, spinach, and tomatoes.
This sandwich is so flavorful that I don’t miss meat or cheese.
Just looking at these beautiful bright colors make me feel I can conquer anything!
4 large eggs
1 tablespoon sugar
salt
pepper
canola oil
1 clove garlic
4~5 cups spinach leaves
4~5 jalapeno pepper slices from a jar cut into small pieces
salt
pepper
1 tomato sliced
6 inch x 6 inch ciabatta bread
2 tablespoons Dijon mustard
1. Mix eggs, sugar, salt, and pepper. Heat oil in a pan. Cook eggs.
2. Heat oil. Cook garlic, spinach, and jalapeno peppers. Salt and pepper.
3. Slice bread. Spread mustard.
4. Sandwich eggs, tomato slices, spinach, and jalapeno peppers.
5. Cut into four pieces.
三色ブレックファストサンドイッチ
いつもいつも言っているので、よくいらしている方は耳にタコかもしれませんが、また言ってしまいます(苦笑)。
アメリカでは朝食、どうしても野菜を摂りにくいのですよね~。
ブレックファストサンドイッチにしても、大抵は、卵、丸いソーセージ、チーズ、という中身がふつう。
どうしたらもっと野菜を食べられるか、と考えて、今回がらっと中身を変えてみました。
卵、ほうれん草、そして、トマト~!
ほうれん草はニンニクと一緒に炒めたもの。
瓶詰のハラペーニョペッパーをさっといためたものも隠し味にサンドイッチに忍ばせてます。
この、少し酸味のあるぴりっとしたペッパーがまたなかなかいい味を出してくれるんですよ。
手に入ればお勧めです。コレ。
赤黄緑、鮮やかな三色がきれいなサンドイッチ。

Tempeh and Egg Open Sandwich Breakfast
I have just started experimenting with tempeh and I’m liking using it in my cooking so far. I think there are lots of possibilities and I can’t wait to find more time to play with this new ingredient!
Here is my second tempeh dish I made (here is my first one), and I made this for a weekend breakfast. The toasted English muffin was topped with a poached egg and tempeh that was sauteed and flavored with Asian inspired sweet sauce, and then the open sandwich was served with Sriracha mayo. Of course I don’t forget to fill the plate with vegetables! I like having vegetables even for breakfast (it’s soooo hard to find vegetables when you have breakfast at restaurants!). I loved making a bite with everything, English muffin, tempeh, egg, and spicy mayo, a small piece of tomato, and a few salad leaves! The big flavor created by all these ingredients explodes in my mouth!! Now that’s breakfast!

作ってるときと食べてる時は思わなかったのだけれど、
こうやって写真を見てみると、テンペの部分が何となく納豆に見えなくもない?
同じ大豆だもんね。。。
でも、糸は引かないのですよ~!
前と同じように甘辛く味付けしたテンペに、ポーチドエッグ、そして、ちょっぴりスパイシーソースを利かせたマヨネーズを、イングリッシュマフィンにのせて、ブレックファスト~。
付け合わせ(っていうかお皿の半分ぐらいだね)には、野菜をたっぷり。
これはおうちだからこそ出来ること。
いつも言っているけれどレストランでの朝食は野菜を探すのが難し。。。
黄身がとろっとした卵、甘辛いテンペ、ぱりっとトーストされたイングリッシュマフィン、ぴりマヨ、フレッシュなトマトにサラダ葉、ソテーしたアスパラ、全部一緒に口に入れると(大口やね(笑))、美味しい~!!
何とも名前をつけがたいこういう料理が私やっぱり好きだわ~。
ちなみに今日日曜日はイースター、キリスト教の祝日、復活祭です。
家族でブランチを一緒に食べてお祝い、という家庭が多い日。
我が家は今年はテリーと二人で、近所のお気に入りの店で、ランチを予約してあります。
楽しみ~。
午後は久しぶりに時間ができたので、料理でもしようと思っていたのですが、今日は祝日でスーパーはどこもお休み~!
何も食べるものがうちにないので(カップラーメンも尽きてしまっているので(苦笑))、今日は夕食も外食になりそお。。。

Egg Salad
I always liked boiled eggs, but a few weeks ago I had this strong craving for egg salad. I crave for different things but I think this is the first time I craved for egg salad! You’ll find lots of vegetables (celery, red onion, capers, pickled radishes) in my egg salad. I loved the sweetness from my homemade pickled radishes in this salad.

エッグサラダ
先日どうしてもエッグサラダが食べたくなりました。
どうしてもコレが食べたい!というのは時々あるのですが、エッグサラダ、というのは初めてだったかも(笑)。
もともと茹で卵は好きなんですよね。
でも、エッグサラダ、っていうのはどこからきたんだか?
マヨネーズ、塩、こしょうで、味付け。
でも、やっぱり野菜を入れたくなる私。
セロリ、赤玉、ケイパー、ホームメードラディッシュピクルスが入ってます。
ラディッシュピクルスがなかなかいい味を出してくれましたよ~。

Fried Noodle Omelette
I had some leftover “yakisoba”, or Japanese style fried noodle. So I decided to make a Spanish style omelette for breakfast this morning; but not with potatoes but with the noodle. Yakisoba is usually made with pork, cabbage, and other vegetables and flavored with thick sweet sauce or spices. The yakisoba was cooked with onions, cabbage, peppers, and green onion. I also added red ginger to this omelette as it is usually served with yakisoba and it gives nice fresh spiciness. I would recommend flavoring the fried noodle with spices instead of sauce for this to keep the omelette from turning brown.

焼きそばdeスペインオムレツ風
久々にスペインオムレツの気分だった今朝。
スペインオムレツに使うジャガイモはないけど、残り物の焼きそばがあり。
で、焼きそば入りオムレツ、作ってみました。
焼きそばは塩味だったので、オムレツも茶色くならず、きれいに出来上がりました。
焼きそばは、玉ねぎ、パプリカ、小ネギ入り。
オムレツには、紅ショウガも少し味のアクセントとして入れてみました。
美味しい~!!
小さく切ったら、スナックみたいに手でつまんで食べられちゃいます。
私はそのままが好きだったけど、ソースらぶ!なテリーには、おたふくお好み焼きソースをディッピングできるように出してあげました。
オリンピック、始まりましたね~!
やっぱりアメリカ選手が中心の報道になってしまうのだけれど、ちょこちょこっと日本人選手が出るとしっかり応援してますよ~。
が、失敗しないか、と、ついはらはらどきどきする性格なので、ちと心臓に悪い(苦笑)?
特にほら、フィギュアスケートなんかは、ジャンプが今に来るぞ~っ!、という態勢に入ると、もう見てられませ~ん!
