Kimchi Potato Soup – Vegan

Almost any soup is a comfort food for me. But when you add potatoes, that instantly makes the soup even more comforting. Here is my recent potato soup. I liked it very much when I first tasted it, but I wanted to add something a bit spicy. After going back and forth between Louisiana hot sauce and kimchi, I decided to go with kimchi. I just added a few tablespoons of chopped kimchi cabbage to the pot. Terry will not eat kimchi itself, but he didn’t mind this subtly kimchi flavored soup.

Kimchi potato soup: canola oil, garlic, onion, celery, carrot, potatoes, water, vegetable bouillon, tomato paste, cane sugar, salt, pepper, kimchi

キムチポテトスープ

キムチポテトスープ、または、略して、キムポテスープとでも名付けようかな。

ジャガイモの角切りをたっぷり入れたトマト味のスープですが、

仕上げに、キムチを細かく切ったものを投入！

テリーはキムチ、そのままでは決して食べませんが（匂いにも敏感！）、このスープは美味しい、と言って食べてくれました。

実はキムチ入ってるのよ～、と教えてあげたら、“なんとなくそうかなあ、と思った”って。

キムチ、やっぱり味わかるのね～。。。

Curry Leaf Soup with Sweet Potato, Lentils, and Kale – Vegan

A few weeks ago when we were at an Indian restaurant for lunch I found wonderfully aromatic soup at their lunch buffet. I liked the flavor but I couldn’t pinpoint what it was. One thing that caught my eye was that there were lots of leaves floating in the soup. At that time I thought they were bay leaves. But then when we were at an Indian grocery store the other day, I found a small package of beautiful leaves, and they looked just like those in the soup! The package said “curry leaves”, and I had to buy them. I did some research on how to use these leaves to flavor soup. For this soup I used both whole leaves and ground leaves. The curry leaves give a very interesting flavor. Surprisingly it’s not similar to the curry spice I’m familiar with. It’s hard to explain, but it’s definitely worth a try.

カレーの葉風味のスープ

具は、きれいなオレンジ色のスイートポテトや、レンズ豆、ケールが入っているのですが、

このスープの主役は、カレーの葉っぱ。

先日インド料理店で食べたスープがとっても美味しくって、その時スープに葉っぱがいくつか浮かんでいたんですよね。

見た目からしてローリエだと最初は勝手に思ったのですが、食べてみると風味が独特で違うのかも、と。

そして、先日インド食料品店に行った時にたまたま、同じような葉っぱを発見！

袋を見てみたら、カレーリーフ（カレーの葉）、と書いてありました。

もちろんお買い上げ～！

インターネットでどうやって使うか調べてみたら、そのままローリエのように葉を丸ごと入れて風味付けをしたり、または、葉っぱを挽いて使う、ともありました。

で、私は両方、丸ごと葉っぱと、葉っぱを挽いたものと両方このスープには入れてみました。

カレーの葉、というものの、いわゆるカレーの香りとはちょっと違うんですよね。

なんとも説明しがたいですが、個人的には好きな風味です。

マスタードシードやら、クミンやらも入って、独特な味のスープとなりました。

初めての食材ってわくわくします～。

Sweet Potato Chips with Yogurt Dip

This was something I wanted to try for a while. I checked several different recipes and they had very different directions in terms of the temperature of the oven and the cooking time. Some said cook at 400F for 20 minutes and others said 200F for 2 hours! I started my first batch at 400 degrees. But after 10 minutes, I got nervous and I started changing the temperature, from 400F to 425F and then quickly to 300F. And later to 200 and then back up to 350F… I tried to figure out the right temperature and the right cooking time with my second and third batch, but I was so afraid that I might burn them. I stayed right in front of the oven and again constantly adjusted the temperature every five minutes or so. So unfortunately I can’t give you detailed instructions, but I am very happy with the results. I would say about 60% turned out perfect; crunchy but not burned. I’ll definitely make these again. They are so tasty. After lightly coating the sweet potato slices with olive oil, I sprinkled salt, black pepper, garlic powder, and cumin. The spices go so well with the natural sweetness of the sweet potatoes. I’d like to try making these with yam in the future, too, to get the pretty orange color.

スイートポテトチップ＆ヨーグルトディップ

一見ふつうのポテトチップに見えますが、スイートポテトと呼ばれる少し甘さのあるお芋を使ってチップを作ってみました。

揚げたのではなくオーブンでかりっと焼き上げました。

オーブンの温度設定になかなか自信が持てず、オーブンの前に座り込んで5分おきぐらいに温度を変えてました～。

ちょっと目を離すと焦げてしまうんですよね～。

焦がさないでかりっと焼き上げるのがなかなか大変でした。

黒こしょうやクミン、ガーリックなんかまぶして焼きましたが、スイートポテトの自然な甘さとぴったり。

すっきりクールなヨーグルトディップとの相性も◎。

Garlic Sriracha Mashed Potatoes

I said this in our recent post, but I’ve been a big fan of Sriracha Sauce for many years. So I’m very excited that a big potato chip company just recently made Sriracha flavored potato chips as one of their new three flavors for people to vote for. I got an inspiration from it for this mashed potatoes. I added Sriracha sauce right before serving and lightly mixed it in. It creates a pretty marbled look.

Garlic Sriracha mashed potatoes: cooked garlic, cooked potatoes, soy milk, salt, pepper, Sriracha sauce, (olive oil)

ガーリック・スリラチャ風味マッシュポテト

数日前に紹介したスリラチャソース、またまた登場で～す。

ぴりっと辛く真赤なソース。

最近このスリラチャソース味のポテトチップが売り出されたのですが、そこからヒントを得て、マッシュポテトに使ってみました。

しっかり混ぜずに、ところどころがぴりっとする感じで。

久々に私モデルで、テリーに写真撮ってもらいました～（上写真）。

I was in a mood for a sweet and sour dish. I used to make this dish with pork but I decided to replace pork with potatoes this time. I absolutely loved it!

酢ぽてベジ

なんとも変な名前になってしまいました。。。

酢豚なんだけれど、豚の代わりに、じゃがいも（ぽてと）なのです。

これ、と～っても美味しかったです。

油で野菜を揚げたりしているので、決してヘルシー料理ではありませんが、野菜たっぷりで満足～な私でした。

I didn’t use to like potatoes in my curry, but that’s changed. I still don’t like big pieces but I like some small pieces of potatoes and the way they crumble and thicken the curry.

ポテトとカリフラワーのココナッツカレー

子供のころはなぜかカレーのジャガイモがあまり好きではありませんでした。

食べないわけではなかったのですが、自分でよそうと、じゃがいも以外の具をついつい入れていたような。。。

ところが、このココナッツカレーにはじゃがいもがあうんですよね～。

薄めに切って入れるじゃがいもが美味しい！

薄いのでもさもさっとしないし、少しずつ崩れてくるところも好き。

お気に入り市販瓶入りのインドカレーペースト、缶トマトピュレー、ココナッツミルクなんかが入ってます。

カリフラワーとじゃがいもの組み合わせもお気に入り。
