Here is one of my comfort foods that I grew up eating a lot… I also ate this a lot at my college and company cafeterias. Their egg rice bowl was always tasty, satisfying, and cheap!

Cook vegetables (and fish cake if you have it) in soy-based sweet broth, and add eggs and cook them in the broth. Place the vegetables, eggs, and the broth on top of cooked white rice.

Egg rice bowl: cooked rice, eggs, naruto (fish cake), green onion, mushroom, snap peas, tofu, water, dashi, soy sauce, sugar, sake

ときどきやっぱりこういう日本の味が恋しくなります。

たまご丼は、日本の短大、会社のカフェテリアでよく食べていましたね～。。。

安くって美味しい、っていうのが魅力でした（笑）。

ちょっと茶色くなってしまったけれど、美味しかったで～す。

昨日は感謝祭でした。

昨年は我が家で親戚が集まりましたが、今年は義姉の家で行いました。

で、七面鳥は義姉が焼いてくれて、後は持ち寄り～。

私はグリーンビーン（いんげん）キャセロールの担当でした。

何かというと、いんげんをマッシュルームが入ったクリームソースとあえて、上にオニオンフライをのせてオーブンで焼いたもの。

私が持っていったキャセロール、好評でしたよ～。

缶詰のマッシュルームスープで作る人が多いですが、私はソースも自分で作りました。

ちょっと入るシェリー酒がミソです。

で、感謝祭用に作ったキャセロールは残らなかったのですが、これを使ってサンドイッチを作ったら美味しそうだなあ、とふとアイデアが浮かび、今日同じキャセロールをまた作りました（笑）。

バンズは、粒マスタードを塗り、ローストビーフスライス、いんげんキャセロール、そして、たっぷりオニオンフライをのせたら出来上がり。

私はローストビーフにステーキソースを少しかけました。

Here is tasty and satisfying chili and it’s even vegan! Not that I miss any meat in this chili, but the wild rice gives a unique texture that almost mimics the texture of the ground meat. I made this in a big pot but it disappeared quickly. I will definitely make this chili again!

Wild rice mushroom chili: canola oil, garlic, onion, celery, red peppers, mushrooms, canned tomatoes, black beans, water, vegetable base, chili powder, bay leaves, cumin, dried oregano, cooked wild rice, BBQ sauce, worcestershire sauce, hot sauce, sugar, salt, pepper, crushed red pepper, green onion, cilantro

ワイルドライスときのこのチリコンカーン

こちらではチリ、日本だとチリコンカーンと呼ばれるようですね。

本物のチリ、または、チリコンカーンは、牛ひき肉、トマト、豆が主役のシチュー。

チリパウダーが入って、ぴりっと辛めな仕上がりです。

今回はヴィーガンなチリを作ってみました～。

なので、肉なし！

その代わりに、たっぷりのマッシュルームとワイルドライスが入ってます。

ワイルドライスは、炊くと、ぷちぷちっとした食感が出て、なんとなくひき肉を思わせるところもあるかなあ～（微妙ですが（笑））。

ワイルドライス、マッシュルーム、トマト、ブラックビーン、のほかにも、玉ねぎ、セロリ、パプリカ、にんにくなど野菜もたっぷり。

肉が入らないかわりに、いろいろな調味料で味を複雑にするのがコツで～す。

テリーにも大好評、私もかなり気に入りました。

味、ボリュームともかなり満足感があるので、これなら、ヴィーガンやベジタリアンじゃない人にも出せるかな？

If you’re looking for quality Asian mushrooms in the Twin Cities, check out United Noodles. They have the best enoki mushrooms, much better than those at local grocery stores. Last time I was at United noodles, I found these beautiful buna-shimeji mushrooms. They were so fresh that I wanted to make a simple dish where I could really taste the fresh flavors of the mushrooms. Lightly cooked garlic, onion, and buna-shimeji mushrooms were mixed with cooked whole wheat pasta. Salt, pepper, crushed red pepper, olive oil, and soy sauce were added, and then thinly cut shiso (Japanese basil leaves) were sprinkled on top.

ブナシメジと青じそのパスタ
昼食　２０１２年１０月７日

先日、日本食料品店で見つけたのが、きれいなブナシメジ！！

あまりの美しさについ購入しました。

食材が美しいときは、シンプルにいただくのが一番ですね～。

と、いうことで、パスタにしました。

軽く炒めたにんにく、玉ねぎ、ぶたしめじ、を茹でたてパスタで和えたら、塩こしょう、クラッシュドレッドペッパー、そして、仕上げにオリーブオイルとしょうゆを少したらして、大葉の千切りを散らしたら出来上がり。

美味しかった～。

また、ブナシメジ買いに行きた～い。

次はきのこごはんかな？

The picture looks rather summery, so I decided to post it today before I start seeing snow falling here in Minnesota!

Soba Salad: boiled and sauteed green beans, sauteed mushrooms, cooked soba, mint leaves, green onion, black sesame, salt, pepper, lemon miso dressing, additional lemon juice (drizzled right before serving)

Lemon miso dressing: white miso, tahini, lemon juice, soy sauce, white vinegar, canola oil, agave syrup, salt, pepper

写真がなんだか夏っぽいので、あわててアップしてます～！

数週間前に作った蕎麦サラダ。

レモンと味噌で作ったドレッシングであえてみました。

具はたまたま家にあったいんげんとマッシュルームで～す。

久々に、モデルはわたくし、写真は、テリー♪　

（こうやってこんな構図で撮って、と注文するのはわたくし。）

エプロンは普段ほとんどしないんだけれど、見たり買ったりするのは好き（笑）。

次回は秋っぽいエプロンでの登場もあるかも～（って登場しなくっていいって（笑）？）。

ステーキサラダと言っても、肉なし～。

マッシュルームステーキのスライスが入ったものです。

お気に入り、大きなポートベロマッシュルームをマリネしてグリルしたものを薄くスライス。

アボカド、ベビーケール、赤玉と一緒にサラダ仕立て。

手作りわさびドレッシングでいただきました～。
