Cabbage Soup

The braised cabbage recipe in the book, All About Braising, is awesome. I’ve made this so many times. It is so good that I decided to make soup with the braised cabbage and the other vegetables that were cooked with the cabbage in the same pan. The large cabbage pieces are fun to eat and very satisfying.

Cabbage soup: cabbage, carrot, onion, celery, olive oil, salt, pepper, crushed red pepper, water, bay leaf, vegetable base, pink cooked lentils

どっかりキャベツスープ

オーブンで２時間じっくり焼いたキャベツをどっかり入れたスープ。

どっかり？っていう表現はなんか変、とは思うものの、他にいい言葉が浮かばな～い（笑）！

丸ごと、って言いたいところだけど、８等分にしたキャベツだから、丸ごととは違うもんねえ。

一緒にオーブンで焼いたほかの野菜、にんじん、玉ねぎ、セロリと一緒に煮込んだスープ。

キャベツ、スプーンで簡単に切れますよ～。

柔らかくって甘いキャベツ、た～っぷり食べられます。

そうそう、レンズ豆も入ってます。

今回初めて買った違う色のレンズ豆。

ピンクっぽいオレンジ色がなかなかいい感じ～。

追記：“ごろんとキャベツスープ”、なんていう名前のほうがいいかしらん？（笑）ふと思ったんで追記です。。。

Kimchi Soup with Kale and Meatballs

Kimchi has a very strong flavor and smell, and it’s not for everyone. It’s the kind of food people either love or hate. But people who are not a big fan of kimchi may actually like this soup. Its smell is rather subtle in this soup although it gives a nice depth to the flavors. My husband doesn’t like kimchi and he will never eat it out of a jar, but he (said! he) liked this soup.

Kimchi soup with kale and meatballs: canola oil, kale, water, ginger, Chinese chicken base, gochujang, kimchi (both cabbage (chopped) and marinade), meatballs (garlic, ginger, ground pork, green onion, cilantro, soy sauce, sesame oil,egg, salt, pepper, canola oil), potato starch noodles, sugar, salt, pepper

肉団子とケール入りキムチスープ

キムチ入りのスープ～！

テリー、キムチはそのままでは決して食べないけれど、こうやって何かに混ざってると、食べてくれることがあります。

今回のこのスープも食べてくれましたよ～。

肉団子とケールとマロニー入りのこのスープ。

私的にもかなりヒットでした！

肉団子は先日餃子を作ったときに残ったタネに卵を加えて焼いたもの。

なので、肉団子も香菜たっぷり。

マロニーじゃなくって、ご飯を入れて雑炊風にしても美味しいだろうなあ。。。

ちなみに、ケールは本当に優れた葉野菜。

しっかり煮込んでも、いい感じに味も歯ごたえも残るし、この濃い緑色がなんとも身体に良さそうではないですか（笑）。

Cilantro Pot Stickers

I was in a mood for pot stickers and last weekend I decided to make over 30 pot stickers. I did add pork but in my filling you’ll find lot of vegetables, such as cabbage. This time I also added lots of cilantro and it gave a great fresh flavor.

香菜たっぷり餃子

お正月は何を作ろう、と悩んだのですが、結局自分が一番好きなものを作ろう！、ということで、出来たのがこちら。

お正月から、餃子～！

ちょっぴり肉入りだけど、キャベツたっぷり、そして、今回は香菜もたっぷり入れました。

ニラもそうだけど、こういうちょっとクセのある野菜が入ると美味しいですね～。

キャベツの葉はさっと茹でましたが、食感がしっかり残るぐらいにしたのが、良かったです。

沢山作ったと思いましたが、ほとんど二人で完食しましたよ～。

中身が少し残ったので、こちらは肉団子にしました。

餃子は、我が家の場合、焼く前に写真を撮るのが必須。

というのも、上手く焼けないと、困るので（苦笑）。

今回は、沢山フライパンにくっついてしまったので（悲）、やっぱり写真、先に撮っておいてよかったです（笑）。

見かけはイマイチだったけど、味は良かったんですよ～。

（英語では、ポット・スティッカー、直訳すれば、鍋にくっつくもの、ですしね～（笑）。）

ちなみに、餃子のひだひだ、ある方のブログでは、ひだひだは３個が落ち着く、とおっしゃってましたが、人それぞれですね。

私は５個が落ち着きます。

レンズ豆とほうれん草の目玉焼きのせ

１月１日と言っても全くそういう感じがしないミネソタの我が家です（苦笑）。。。

他の祝日と同じ。

明日２日は仕事だしね～。

今日アップの一品は昨年末朝ごはんに作ったものです。

冷蔵庫にたまたまあったもの、レンズまめ、赤玉、ほうれん草、トマトを炒めて、その上に、半熟目玉焼きをのっけました。

黄身をくずしながら食べるのが美味しかったです～。

Persimmon and Wild Rice Salad with Lemon Ginger Dressing

Using the beautiful Fuyu persimmon I found at the local grocery store, I made this refreshing and tasty salad. The persimmon was being sold at the organic section. I was surprised to see them there and at the same time I was happy to see this Japanese fall fruit being sold at more and more places in the US. The beautiful orange colored persimmon was cut into small pieces and served with kale, wild rice, lentils, green onion, and lemon ginger dressing. The combination of the sweetness from the persimmon and the bitterness from the kale is perfectly accented with the bright lemon and ginger flavored dressing.

Lemon ginger dressing: grated ginger, lemon zest, canola oil, white vinegar, sugar, salt, pepper

柿とワイルドライスのサラダ、レモン生姜ドレッシングあえ

先日普通のスーパーで美味しそうな富有柿を見つけたので、つい一個購入。

皮をむくときれいなオレンジ色。

パーフェクトに熟れていて、美味しい甘さ。

ワイルドライスとあわせてサラダを作りました。

ワイルドライス、レンズ豆、ケール、小ねぎと混ぜ合わせたら、レモンと生姜味のドレッシングであえます。

柿の甘～くフルーティーな味と、ちょっぴり苦味のあるケール、そして、ぷちぷちした食感のワイルドライスにレンズ豆。

食べるのが楽しいサラダです。

ドレッシングのレモンと生姜味が、これまた爽やか。

サラダ全体の味をぱっと明るくしてくれます～。

レモン生姜ドレッシング：サラダ油、酢、レモンの皮、生姜をおろしたもの、砂糖、塩、こしょう

Spinach Lasagna with Artichoke and Green Olive Topping

Here is my first vegan lasagna! Inside this lasagna you’ll find spinach, tofu/cashew “ricotta cheese”, and tomato sauce. On the top there is more sauce and “ricotta cheese” along with artichoke and green olive topping. The green olives and artichoke topping gives this lasagna a nice additional flavor and texture.

Spinach Lasagna with Artichoke and Green Olive Toppings (makes two 5.5×9.5 pans)

1/2 (8 ounce) package lasagna noodles

1 pound firm tofu
1 pound raw cashew nuts (lightly soaked)
2 tablespoons cooked and mashed garlic
1 teaspoon garlic powder
1 tablespoon lemon juice
salt
pepper

3 (10 ounce) packages frozen chopped spinach, thawed and drained

2 jars of pasta (red) sauce

1 small jar artichoke (chopped)
1 small jar green olives (chopped)
parsley (chopped)

375F 45minutes

ほうれん草ラザニア、アーティチョークとグリーンオリーブトッピング

週末に、肉、チーズを使わないラザニアを作ってみました～！

中身はトマトソース、ほうれん草、そして、手作り“リコッタチーズ”入り。

リコッタチーズは、豆腐とカシューナッツが主材料となってますが、なかなかイケマス。

肉が入らないので、何かパンチのある味を利かせたいと思って、トッピングとして、アーティチョークとグリーンオリーブのみじん切りをのせました。

本当は中に入れるつもりだったのですが、忘れていて、オーブンに入れる直前になって、あらあら、と（苦笑）。

上のラザニア一層分はがそうとも思ったのですが、ぐちゃぐちゃになりそうだったので、上にのせましたが、見た目としてはこのほうが良かったかな？

グリーンオリーブはそのままだと味が強すぎる、と思うことが多いですが、ちょっと一味足したい、と言うときにいい役目をしてくれますよ。
