No Meat Braised Collard Greens with Porcini Mushrooms
I always loved mushrooms, but since I started the 95% plant-based diet, my consumption of mushrooms has definitely increased. Mushrooms, particularly dried mushrooms add rich flavors to any dishes. Dried shiitake mushroom is one of very popular ingredients used in traditional Japanese cooking, mainly used for doing exactly what I said; giving a depth to whatever the dishes it is added to.
So when I decided to make my braised collard greens completely plant-based, the dried mushroom came to my mind as a candidate to substitute the pork. For this dish I chose the porcini mushroom, just because I thought it would be a good match for this particular dish. And I was right! This turned out great! It was a big success because we both felt that we didn’t miss the pork at all! I was so excited to learn that you can make soul food like this entirely plant based as well!
canola oil
2 cloves garlic, chopped
1 onion, chopped
1 oz dried porcini mushrooms
1~ 1.5 cup water
1 large bunch collard greens, cut into strips
2~3 tablespoons cane sugar
1 tablespoon soy sauce
salt and pepper
crushed red pepper
Louisiana hot sauce
1. Cook garlic and onion with oil.
2. Once the onion is caramelized, add water and deglaze the pan.
3. Add porcini mushrooms.
4. Add collard greens, sugar, and soy sauce.
5. Cover and cook for about 30 minutes until the collard green is tender.
6. Salt and pepper, and add a few splashes of hot sauce.
コラードグリーンの煮込み(ヴィーガン)
これはちょっと日本には紹介し難い料理の一つですね~。
コラードグリーンというのは、こういう葉野菜なのですが、
日本ではあまり出回っていない感じですね。
とっても栄養価が高いようなんですよ。
アメリカでは、南部料理としてよく出てきますが、
ハムホック(豚脚の燻製)やらベーコンなどと一緒に煮込まれることが多いのです。
今回、どうしてもヴィーガン、肉を使わない料理にしたくって、
ハムホックやらベーコンの代わりに、ドライポルチーニマッシュルームを使いました。
干し椎茸と同じで、乾燥されたきのこって、こういう煮込み料理にはいい味を出してくれるんですよね~。
出来上がりは、と~っても満足。
もともと、どっちかと言うと素朴なソウルフードなのですが、なんともじ~ん、と心にしみるような(笑)深い味の仕上がり。
テリーにも合格点をもらいました~。
“肉ナシでも全然いいね”って(嬉)。

Salmon and Grapefruit Sushi Lettuce Boat
Things do not always go as you planned…
You know this, but it’s not always easy to deal with any unexpected events.
I had this idea of making small lettuce wraps using Boston lettuce.
I knew our local grocery store, Cub Foods, has this lettuce.
So I went.
They had a few heads of Boston lettuce, but they just didn’t look good. They kind of looked tired.
I picked one up, put it down, and then picked it up again, and put it down…
The third time I did this, Terry, who was patiently watching me from behind finally said, “If it doesn’t look good, don’t buy it”.
It’s strange, but sometimes you need to actually “hear” what you’re saying all along in your head to really process it.
So I put it down for the last time.
Then what?
I needed plan B.
Fortunately, I noticed a beautiful fresh romaine lettuce that was staring at me right in front.
And, this idea of “lettuce boat” hit me.
I’m really happy with the end result.
The crispy romaine lettuce was actually a perfect choice for this dish.
I admit I’m not the most flexible person in the world, but I am slowly learning to go with the flow…
1/4 pound salmon
salt and pepper
mustard teriyaki sauce (this is a very rough estimate. Please adjust to your taste)
-1/4 cup soy sauce
-1/4 cup honey and sugar together
-1 tablespoon Dijon mustard (regular)
-1 tablespoon Dijon mustard (with coarse seeds)
1/4 grapefruit – sectioned and cut into small pieces
1 Romaine lettuce leaf
sushi rice
-1 cup cooked rice
-1.5 tablespoons vinegar
-1.5 tablespoons sugar
-salt
green onion – chopped
1. Salt and pepper salmon. Poach salmon in boiled water on low-medium heat covered for about 5~7 minutes, or until almost cooked through.
2. Roughly cut the salmon into bite-sized pieces with a fork. Pour the mustard teriyaki sauce over it. Broil for a few minutes, until the sauce starts bubbling.
3. Put sushi rice, salmon, and grapefruit on a lettuce leaf.
4. Pour the sauce over salmon. Sprinkle green onion.

世の中予定通りにいかない、というのは頭ではわかっているものの、
予定が狂うと、かなり焦ってしまう私です(苦笑)。
週末、ボストンレタスという小さ目の丸いレタスを使って、ミニレタス包みを作ろう、と意気込んでスーパーへ行ったのに、
売っているボストンレタス、どれも、なんだかしなっとしていて。。。
手にとっては、置いて、また手にとっては、置いて、と繰り返していたら、
テリー、“見た目あまり良くないなら、買わない方がいいよ。”
頭ではわかってるんだけれど、実際耳で聞くと、そうか、と納得するものでしょうか。
泣く泣くボストンレタスをあきらめました。
で、それならどうしよう、と目を落としたところに、この綺麗なロメインレタスを発見。
ボストンレタスのように丸い形とは全く違って、細長いこのレタス、そうだ、コレでボート風にしよう、と。
出来上がりはとっても満足。
しゃきしゃきっとしたロメインレタスのほうが、この料理にはあってたかも、というぐらい。
“Go with the Flow(流れに身を任せる、といった感じの訳になるでしょうか)”、言うのは簡単だけれど実行するのはなかなか難し。。。

Red Quinoa and Sweet Potato Zo-sui
After a few weeks of lots of eating out, I’m going back to basics. I do enjoy eating out (and I try to make healthy choices at restaurants), but after a while I miss my home cooked meals. This zo-sui or Japanese risotto was a perfect way to re-focus on my diet and life style. The biggest difference between zo-sui and risotto is that you add cooked rice (or quinoa in this case) to some sort of soup or stock, instead of cooking rice in the stock from the very beginning. Because of this cooking method zosui tends to end up as a much lighter meal. By making my stock using kombu (dried seaweed), I was able to keep this dish 100% plant based. Season lightly and enjoy the flavors of each ingredient.

赤キノアとサツマイモの雑炊
ここ数週間ガレージセールをやったり、引っ越しの続きをしていたり、と何かと忙しく、我が家にしては珍しく外食が続きました。。。
外食は好きなのですが、続きすぎるとやっぱりうちごはんが恋しくなります。
で、今日はリセットも兼ねて、こんなシンプル(質素とも言う(笑))な雑炊を作ってみました。
出来たのを見て、こういうの江戸時代か何かに農家の人たちが作って食べてそうだなあ、と思ったりして(笑)。
身体によいと言われるプチプチしたキノア(今日は赤)、日本のさつまいも、ラシナートケールという濃い緑色をした葉野菜を、昆布出汁を元にしたスープで少し煮込んで出来上がり。
一つ一つの素材の味をしっかり堪能。
さつまいもの甘さに、ちょっとクセのあるケールがあうのです。
美味しゅうございました。。。

Kale and Grape Salad
Whenever I eat kale, I feel like my body tells me “thank you!” I can’t emphasize enough though that the number one reason I eat kale is not because it’s supposed to be healthy but because it simply tastes good!
Kale and grape salad: kale, grapes, radish, tomatoes, peppers, red onion, mustard dressing(Dijon mustard, vinegar, sugar, canola oil, salt, pepper)

ぱりぱりっとしたケールの葉っぱ。
一度食べると病みつきになります。
何をあわせても美味しいのですが、果物との相性もばっちり。
マスタードをきかせたドレッシングであえました。
身体が、“美味しい!!ヘルシー!!” と叫ぶような(笑)嬉しいサラダですよ~。

Roasted Vegetables on Quinoa
Since my previous post was all about meat, I wanted to post something to assure people that we are still on the 95% plant based diet. I often roast lots of vegetables on Sundays so that I can use the vegetables all through the week, for lunch and dinner. I can use them to make vegetable curry super quickly, or I can make vegetable pasta by simply adding the vegetables and tomato sauce from a jar to pasta. Or I can just toss them on rice or quinoa and serve with homemade sauce like this one. This was my lunch today. Roasted vegetables and baby kale leaves were placed on top of quinoa and served with two different kinds of sauce, miso sauce and cilantro sauce. Love this type of simple tasty and healthy one-plate meal.

先日はいかにも肉~!、という感じだったので、
今回は、まだ95%植物性食生活を続けてますよ~、というお知らせも兼ねて、
こんなのを紹介。
今日のランチに作りました。
週末は、大量に野菜を買ってきたらオーブンでローストすることが多いです。
火を通しておくと、日持ちがするし、しかも、忙しい週中にはこれを使って、ぱぱっと夕食が作れるのも嬉しいところ。
カレーに入れたり、パスタにトマトソースと一緒にあえたり、と簡単にメイン料理が出来上がります。
今日みたいに、シンプルに、ご飯やキノアの上にのせて、自家製ソースをかけて食べるのも実はお気に入り。
これは、キノアで作ってみました。
自家製ソース、今日は二種類。
みそ味と香菜味。
二種類のソースをかけるの、実は私大好きでして。
ちょっと手間はかかるけど、これを混ぜ混ぜして食べるのが大好きです。
