<\/a><\/p>\nWalnut Butter Rum Cookies<\/strong> Merry Christmas! Terry and I had a wonderful time with our family tonight.<\/p>\n Here are Butter Rum Cookies that I made yesterday. There are lots of walnuts and butterscotch morsels in these cookies, and a hint of rum flavor makes these even more tasty. I tend to overbake my cookies, and this time Terry helped me avoid that by standing right by me in front of the oven and encouraging me to take them out when they were still gooey-looking. I was a bit afraid that the cookies would be too soft, but I have to admit they turned out great. They were perfectly soft and chewy, but not too soft.<\/p>\n Walnut Butter Rum Cookies 1. \n-1\/2 (1 stick) of butter, room temperature
\n-1.5 cups of brown sugar
\n-1 egg yolk
\n-rum – the same amount of one egg white plus 1 teaspoon
\n-2 cups of all-purpose flour
\n-1\/2 teaspoon of baking soda
\n-1\/2 teaspoon of salt
\n-1.5 cups of chopped walnuts
\n-3\/4 cup of bite-size butterscotch morsels<\/p>\n
\n2. Add the egg yolk and rum until well incorporated.
\n3. In a separate bowl sift together the flour, baking soda, and salt. Slowly add the flour mixture to the butter mixture and mix until just incorporated. Fold in the walnuts and butterscotch morsels. Cover with plastic wrap and chill for 30 minutes.
\n4. Preheat the oven to 350F. Drop spoonfuls of the cookie, about 1 inch balls, onto cookie sheets lined with parchment paper. Bake for about 11 minutes or until lightly browned around the edges.<\/p>\n<\/a> <\/a><\/p>\n<\/a><\/p>\n
