Lemon-Cornmeal Cake<\/strong>
\nNovember 7, 2009<\/em><\/p>\n

The recipe came from the Woman’s Day magazine (March 2009). I happened to find it from my big recipe pile where I keep all the torn-off recipe pages from various old magazines. I decided to make this cake mostly because I wanted to use my new Bundt cake pan. I fell in love with this pan when I saw it at the store a few months ago. I haven’t had a chance to use it and I almost forgot about it. But finally last weekend I got to use it to make this beautiful lemon-cornmeal cake. I was so excited when the cake came out beautifully as I pictured. The cake was glazed with a mixture of fresh lemon juice and sugar when it was still warm; the cake absorbed the fresh citrus flavor. Terry and I liked the cake, especially the edges because they had the most lemony flavor from the glaze. I’ll add more lemon zest and probably a little more lemon juice to the cake batter next time. Terry liked the cake with whipped cream. I liked mine without.<\/p>\n
