I bought a large bag of sweet potatoes, so sweet potato was found in almost every single meal at our house this weekend! For these pancakes, I added diced and cooked sweet potato, along with various spices, such as cinnamon, ginger, and nutmeg, to my fluffy pancake batter. The pancakes were served with cream cheese frosting and pecan caramel sauce, made with pecan nut, sugar, butter, and salt. <\/p>\n
