It&#8217;s kind of surprising you don&#8217;t find many croquettes here in the states especially as people here seem to like fried foods. In Japan, they make all different kinds of croquettes, such as potato, corn, meat, and crab and cream. My mom used to make great potato\/meat croquettes. They were so good when they were just out of the fryer and still super hot. Interestingly, you might not find many rice croquettes in Japan. This is probably my first time to make and eat rice croquettes. I made these because I needed to use up the leftover cooked rice sitting in the fridge.
