{"id":46069,"date":"2017-12-05T22:10:25","date_gmt":"2017-12-06T03:10:25","guid":{"rendered":"https:\/\/www.culinarytribune.com\/?p=46069"},"modified":"2017-12-05T22:10:25","modified_gmt":"2017-12-06T03:10:25","slug":"tantan-ramen%e6%8b%85%e3%80%85%e9%ba%ba","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=46069&lang=en","title":{"rendered":"Tantan Ramen<br>\u62c5\u3005\u9eba"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-46070 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/12\/46.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>There are now a handful of restaurants that serve ramen in our neighborhood.<\/p>\n<p>But there are still large gaps in quality from one restaurant to another.<\/p>\n<p>And it is hard to get a table if you want good quality ramen.<\/p>\n<p>I&#8217;m happy to see that ramen is becoming popular in the U.S., but it&#8217;s also frustrating that you can&#8217;t just go get good ramen any time you want.<\/p>\n<p>So once in a while I do make my own ramen.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-46071 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/12\/42.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>My vegan tantan ramen starts with marinating deep-fried tofu.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-46072 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/12\/44.jpg\" alt=\"\" width=\"510\" height=\"717\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/12\/44.jpg 546w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/12\/44-320x450.jpg 320w\" sizes=\"auto, (max-width: 510px) 100vw, 510px\" \/><\/p>\n<p>The broth is rich, creamy, and has depth of flavors.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-46073 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/12\/39.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>I found these noodles at a local Asian market.<\/p>\n<p>They were selling them as &#8220;Chinese noodles&#8221;, so I thought it would be perfect.<\/p>\n<p>It also looked more yellowish through the packaging.<\/p>\n<p>I particularly picked this brand because the yellow color was added by turmeric and not artificial dye.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-46074 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/12\/45.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>When they were cooked, the color was almost gone, and I also realized that the noodles were rather flat and wider than I thought when they were before cooked.<\/p>\n<p>I was a bit disappointed, but they still tasted good.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-46075 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/12\/41.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>Baby bok choy is one of my favorite green leaves.<\/p>\n<p>These are not only pretty but also very flavorful and refreshing.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-46076 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/12\/55.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>I was so happy with the result.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-46077 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/12\/48.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p><strong>Tantan Ramen &#8211; Vegan<\/strong><\/p>\n<p>1 package deep-fried tofu, crumbled<br \/>\nmarinade (soy sauce, maple syrup, garlic powder, onion powder)<br \/>\ncanola oil<br \/>\n1\/3 cup chopped scallion<br \/>\n1 teaspoon chopped ginger<br \/>\n1~2 tablespoon tobanjan (\u8c46\u677f\u91a4Doubanjiang: chili bean paste)<br \/>\n700 cc water<br \/>\n1~1.5 tablespoons white vinegar<br \/>\n1~1.5 tablespoons soy sauce<br \/>\n1 tablespoon sugar<br \/>\n3~4 tablespoons tahini<br \/>\n1 teaspoon miso<br \/>\n200 cc soy milk<br \/>\nsalt<br \/>\nsesame oil<br \/>\ngarlic chili paste<br \/>\nChinese noodles, cooked<br \/>\nbaby bok choy<\/p>\n<p>1. Marinate crumbled deep-fried tofu in the marinade mixture overnight.<br \/>\n2. Cook scallion and ginger in oil. Add the crumbled\/marinated tofu and tobanjan. Continue to cook over high heat. Stir constantly. Salt and pepper if needed. Set aside 2 tablespoons.<br \/>\n3. Add water and boil. Turn down to low heat.Skip the foam from the top.<br \/>\n4. Add vinegar, soy sauce, sugar, tahini, miso, milk, and salt. Add soy milk. Heat up the soup.<br \/>\n5. Place cooked noodles in a bowl. Pour the soup over the noodles. Put the tofu\/ginger\/scallion mixture that was set aside on top.
