{"id":45324,"date":"2017-09-18T22:31:58","date_gmt":"2017-09-19T02:31:58","guid":{"rendered":"https:\/\/www.culinarytribune.com\/?p=45324"},"modified":"2017-09-18T23:31:58","modified_gmt":"2017-09-19T03:31:58","slug":"sweet-mama-kabocha-salad%e3%82%b9%e3%82%a4%e3%83%bc%e3%83%88%e3%83%9e%e3%83%9e%e5%8d%97%e7%93%9c%e3%82%b5%e3%83%a9%e3%83%80","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=45324&lang=en","title":{"rendered":"Sweet Mama Kabocha Salad<br>\u30b9\u30a4\u30fc\u30c8\u30de\u30de\u5357\u74dc\u30b5\u30e9\u30c0"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-45328 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/09\/31-3.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>As I promised yesterday, in this post I&#8217;d like to show you how I used my homemade vegan mayo.<\/p>\n<p>I think this Sweet Mama Kabocha Salad is a great way to showcase the mayo as well as this squash which has such a cool name!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-45329 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/09\/17-1.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>This is Sweet Mama.<\/p>\n<p>I found it at the local farmers market.<\/p>\n<p>I love trying different kinds of squash, and farmers market is one of the best places to find interesting ones.<\/p>\n<p>Last weekend when I was checking out one of the vendors squash selection, this caught my eye.<\/p>\n<p>I initially thought it was a Kabocha, which is a very popular Japanese winter squash, because it had a similar look.<\/p>\n<p>But the label said &#8220;Sweet Mama&#8221;.<\/p>\n<p>I had never heard of it, but I came home with it.<\/p>\n<p style=\"text-align: center;\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-45330\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/09\/19.jpg\" alt=\"\" width=\"254\" height=\"382\" \/> <img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-45331\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/09\/21.jpg\" alt=\"\" width=\"254\" height=\"382\" \/><\/p>\n<p>When I did some research later, Sweet Mama is described as &#8220;hybrid squash&#8221;, but I couldn&#8217;t find out &#8220;a hybrid of what&#8221;.<\/p>\n<p>According to <a href=\"https:\/\/www.jungseed.com\/P\/03669\/Sweet+Mama+Hybrid+Winter+Squash\" target=\"_blank\" rel=\"noopener noreferrer\">this site<\/a>, Sweet Mama is described as a &#8220;Kabocha-type&#8221; squash.<\/p>\n<p>When I cut it in half and then later cut it into small pieces, I did notice that it is very similar to Kabocha in many ways, like colors of the skin, fresh, and their texture.<\/p>\n<p>So I decided to make one of my favorite Kabocha dishes, Kabocha Salad.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-45333 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/09\/22-2.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>When you cook it, you can definitely see even more similarity to Kabocha as the fresh becomes dry (like potatoes) when cooked, (which I like), and it has mild sweet flavor, similar to Kabocha.<\/p>\n<p>I kept the skin on as I do with Kabocha.<\/p>\n<p>Some parts of the skin can be harder than others, but I actually enjoy the two different textures: soft fresh and harder skin.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-45332 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/09\/24-4.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>So this is where my <a href=\"https:\/\/www.culinarytribune.com\/?p=45303&amp;lang=en\" target=\"_blank\" rel=\"noopener noreferrer\">vegan mayo<\/a> comes in.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-45334 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/09\/28-3.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>The cooked Sweet Mama was mixed with dried cranberries, coated with the homemade vegan mayo and a little maple syrup, and then served with freshly ground black pepper.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-45335 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/09\/32-3.jpg\" alt=\"\" width=\"510\" height=\"717\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/09\/32-3.jpg 547w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/09\/32-3-321x450.jpg 321w\" sizes=\"auto, (max-width: 510px) 100vw, 510px\" \/><\/p>\n<p>Absolutely delicious!!<\/p>\n<p>I can eat a big bowl of this salad myself.<\/p>\n<div id=\"recipe\"><strong>Sweet Mama Kabocha Salad<\/strong> <\/p>\n<p>2 cups Sweet Mama Kabocha, cut into small pieces<br \/>\nsalt and pepper<br \/>\n1\/2 cup dried cranberries<br \/>\n<a href=\"https:\/\/www.culinarytribune.com\/?p=45303&amp;lang=en\" target=\"_blank\" rel=\"noopener noreferrer\">homemade vegan mayo<\/a> &#8211; add 1 tablespoon at a time until it achieves your preference<br \/>\na drizzle of maple syrup<br \/>\nsalt and pepper<\/p>\n<p>1. Add Sweet Mama Kabocha in boiling water. Boil again and then turn heat down to medium-low heat. Continue to cook until cooked through but do not overcook; Kabocha will lose its shape when overcooked. Drain. Salt. Let it cool and dry.<br \/>\n2. Combine the Kabocha and dried cranberries.<br \/>\n3. Add homemade vegan mayo and maple syrup.<br \/>\n4. Salt and pepper.
