{"id":44921,"date":"2017-08-18T18:09:02","date_gmt":"2017-08-18T22:09:02","guid":{"rendered":"https:\/\/www.culinarytribune.com\/?p=44921"},"modified":"2017-08-18T18:11:04","modified_gmt":"2017-08-18T22:11:04","slug":"indian-butter-cauliflower%e3%83%90%e3%82%bf%e3%83%bc%e3%82%ab%e3%83%aa%e3%83%95%e3%83%a9%e3%83%af%e3%83%bc%e3%82%ab%e3%83%ac%e3%83%bc","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=44921&lang=en","title":{"rendered":"Indian Butter Cauliflower<br>\u30d0\u30bf\u30fc\u30ab\u30ea\u30d5\u30e9\u30ef\u30fc\u30ab\u30ec\u30fc"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-44928 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/08\/20-2.jpg\" alt=\"\" width=\"510\" height=\"717\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/08\/20-2.jpg 546w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/08\/20-2-320x450.jpg 320w\" sizes=\"auto, (max-width: 510px) 100vw, 510px\" \/><\/p>\n<p>When we switched from 95% to 100% plant-based diet about a month ago, I thought Indian food would continue to be a great option for us.<\/p>\n<p>And then I quickly realized that it was a bit trickier than I initially thought.<\/p>\n<p>Yes, there are dishes that are flavorful not because of the meat but because of rather a wonderful use of spices.<\/p>\n<p>However, many of our favorite Indian dishes contained some kind of dairy products, like cheese, yogurt and cream.<\/p>\n<p>Then I realized that I could use something else besides cream to make an Indian butter dish.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-44929 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/08\/17-4.jpg\" alt=\"\" width=\"510\" height=\"717\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/08\/17-4.jpg 547w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/08\/17-4-321x450.jpg 321w\" sizes=\"auto, (max-width: 510px) 100vw, 510px\" \/><\/p>\n<p>I use cashew nuts for other things where I would have used mayo, yogurt, or sour cream, so I decided to use cashew cream to see how it goes.<\/p>\n<p>The result was awesome!<\/p>\n<p>We got all the wonderful flavors from a mix of spices, but we also got the creaminess that we were looking for.<\/p>\n<p>I have to say I really didn&#8217;t miss anything, meat or dairy cream.<\/p>\n<p>This is going to be one of our go-to Indian dishes; although it will be hard to find an Indian restaurant who makes vegan butter curry&#8230;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-44930 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/08\/25-3.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>There are pretty plates that do not look that good when food is served on, and then there are not-that-pretty plats that make any food look good.<\/p>\n<p>This is one of that latter kind of plate (or I should say bowl in this case), and I absolutely love it.<\/p>\n<p>I happened to find it on eBay many years ago, and it&#8217;s still one of my favorite dishes.<\/p>\n<div id=\"recipe\">\n<strong>Indian Butter Cauliflower<\/strong><\/p>\n<p>1\/3~1\/2 cup cashew nuts<br \/>\nhot water<br \/>\ncanola oil<br \/>\n4 cloves garlic, chopped<br \/>\n2 teaspoons chopped ginger<br \/>\n1 onion, chopped<br \/>\n1\/2 cauliflower, cut into bite sizes<br \/>\nsalt and pepper<br \/>\n1\/2~1 teaspoon garam masala<br \/>\n1\/2~1 teaspoon turmeric<br \/>\n1 tablespoon cumin<br \/>\n2 cinnamon sticks<br \/>\n2 bay leaves<br \/>\nwater<br \/>\n1 can (28oz) whole tomatoes, pureed<br \/>\n1\/2~1 can (6oz) tomato paste<br \/>\nsugar<br \/>\nsalt and pepper<br \/>\nchopped cilantro or parsley<\/p>\n<p>1. Soak cashew nuts in hot water that barely covers the nuts for 15~20 minutes.<br \/>\n2. Sautee garlic and ginger in oil. Add onion and continue to cook for another few minutes. Add cauliflower and continues to cook. Salt and pepper.<br \/>\n3. Add garam masala, turmeric, cumin, cinnamon sticks, and bay leaves. Mix well.<br \/>\n4. Add water to barely covers the vegetables. Boil and then turn down to low heat. Continue to cook until the cauliflower is cooked through.<br \/>\n5. Add pureed tomatoes, tomato paste, and sugar. Mix well.<br \/>\n6. Puree the cashew nuts until smooth and creamy. Add the cashew cream to the curry. Salt and pepper.
