{"id":43829,"date":"2017-06-06T21:25:15","date_gmt":"2017-06-07T01:25:15","guid":{"rendered":"https:\/\/www.culinarytribune.com\/?p=43829"},"modified":"2017-06-06T21:27:19","modified_gmt":"2017-06-07T01:27:19","slug":"steamed-carrot-muffins%e3%81%ab%e3%82%93%e3%81%98%e3%82%93%e8%92%b8%e3%81%97%e3%83%91%e3%83%b3","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=43829&lang=en","title":{"rendered":"Steamed Carrot Muffins<br>\u306b\u3093\u3058\u3093\u84b8\u3057\u30d1\u30f3"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-43830 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/06\/49.jpg\" alt=\"\" width=\"512\" height=\"365\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/06\/49.jpg 768w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/06\/49-450x321.jpg 450w\" sizes=\"auto, (max-width: 512px) 100vw, 512px\" \/><\/p>\n<p>I&#8217;m always looking for a new snack I can make on the weekend and take to work.<\/p>\n<p>I bought a steamer as part of a set of pots and pans many years ago, but I&#8217;ve never used it.<\/p>\n<p>I&#8217;ve always liked the moist texture of steamed buns, and I decided to make steamed muffins for the first time.<\/p>\n<p>I also liked the idea that I don&#8217;t have to use the oven!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-43831 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/06\/37.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-43832 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/06\/39-1.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>I wanted to make something I could enjoy for breakfast and not for dessert, so I though carrot muffins would be perfect.<\/p>\n<p>The natural bright orange color from the carrot is absolutely beautiful.<\/p>\n<p>This is a simple recipe made with a short list of ingredients including a small amount of sugar.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-43833 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/06\/51-1.jpg\" alt=\"\" width=\"510\" height=\"717\" \/><\/p>\n<p>These muffins were so good and perfect for someone like me who enjoys the natural flavors of the ingredients that are not overwhelmed by excessive sweetness.<\/p>\n<div id=\"recipe\">\n<strong>Steamed Carrot Muffins<\/strong> makes 7~8 muffins<\/p>\n<p>100g thinly sliced carrots<br \/>\n200cc soy milk<br \/>\n2.5 tablespoons sugar<br \/>\n200g all-purpose flour<br \/>\n2.5 teaspoons baking powder<br \/>\na pinch salt<br \/>\n2 tablespoons coconut oil<\/p>\n<p>1. Combine carrots, soy milk, and sugar. Puree the carrots until smooth using a hand blender.<br \/>\n2. Combine flour, baking powder, and salt in a bowl, and mix well. Add the carrot mixture and coconut oil. Mix until combined.<br \/>\n3. Pour the batter into muffin cups.<br \/>\n4. Steam for about 12 minutes or until cooked through.<\/p><\/div>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-43834 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/06\/45.jpg\" alt=\"\" width=\"512\" height=\"365\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/06\/45.jpg 768w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2017\/06\/45-450x322.jpg 450w\" sizes=\"auto, (max-width: 512px) 100vw, 512px\" \/><\/p>\n<p>Okay, using the steamer was the first for me, but using silicone cups was another thing I&#8217;ve never done before either.<\/p>\n<p>When <a href=\"https:\/\/www.culinarytribune.com\/?p=43759&amp;lang=en\" target=\"_blank\" rel=\"noopener noreferrer\">the So-Zai Bread<\/a> unexpectedly stuck to the paper cup, Terry ordered these silicone cups at Amazon for me the same night.<\/p>\n<p>These silicone cups worked wonders.<\/p>\n<p>I was comfortable putting them in the steamer (I wouldn&#8217;t use paper cups), and the muffins came out of these cups super easily.<\/p>\n<p>I like the idea that these are reusable, too.<\/p>\n<p>The only thing I&#8217;m not sure is the bright colors&#8230;<\/p>\n<p>Why is it so hard to find simple white colored silicone cups?<\/p>\n","protected":false},"excerpt":{"rendered":"<p>I&#8217;m always looking for a new snack I can make on the weekend and take to work.
