{"id":42242,"date":"2016-11-25T16:25:42","date_gmt":"2016-11-25T21:25:42","guid":{"rendered":"http:\/\/www.culinarytribune.com\/?p=42242"},"modified":"2016-11-25T16:25:42","modified_gmt":"2016-11-25T21:25:42","slug":"italian-veggie-soup%e3%83%88%e3%83%9e%e3%83%88%e3%83%9f%e3%83%ab%e3%82%af%e3%83%99%e3%82%b8%e3%82%b9%e3%83%bc%e3%83%97","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=42242&lang=en","title":{"rendered":"Italian Veggie Soup<br>\u30c8\u30de\u30c8\u30df\u30eb\u30af\u30d9\u30b8\u30b9\u30fc\u30d7"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-42243 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/11\/22.jpg\" alt=\"22\" width=\"568\" height=\"428\" \/><\/p>\n<p>What do you eat the day after Thanksgiving?<\/p>\n<p>Many of you, particularly the ones who hosted dinner yesterday, may be enjoying turkey sandwiches today.<\/p>\n<p>Well, we didn&#8217;t cook turkey this year and we didn&#8217;t come home with turkey, but we did come home with lots of vegetables!<\/p>\n<p>My sister-in-law who brought a large veggie platter did not want to take home the left-over veggies, and I happily volunteered to bring them home.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-42244 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/11\/19.jpg\" alt=\"19\" width=\"510\" height=\"717\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/11\/19.jpg 547w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/11\/19-321x450.jpg 321w\" sizes=\"auto, (max-width: 510px) 100vw, 510px\" \/><\/p>\n<p>So I decided to make a large pot of veggie soup that should last the whole weekend (or not).<\/p>\n<p>The carrots and cauliflower that came from last night&#8217;s dinner went into the pot.<\/p>\n<p>Those pre-cut baby carrots from the veggie platter come handy, because they are pre-peeled, so I just sliced them.<\/p>\n<p>The cauliflower were already washed and cut into bite sized pieces, too, so no work was required by me!<\/p>\n<p>I also added whatever the vegetables I happened to have in our kitchen and then added some lentils.<\/p>\n<p>I couldn&#8217;t decide if I wanted to make this soup tomato flavored or milk based, so used both.<\/p>\n<p>I used sun-dried tomatoes (I pureed them) to flavor the soup; this idea came from a local Italian restaurant we just recently tried.<\/p>\n<p>I used to use canned whole tomatoes, and then switched to tomato paste because I liked the condensed flavor in the paste.<\/p>\n<p>Now I&#8217;m moving onto sun-dried tomatoes, which seem to have even more condensed flavor!<\/p>\n<p>This soup is super flavorful (but not heavy), and it&#8217;s hard to believe it&#8217;s vegan!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-42245 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/11\/21-1.jpg\" alt=\"21\" width=\"510\" height=\"717\" srcset=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/11\/21-1.jpg 547w, https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/11\/21-1-321x450.jpg 321w\" sizes=\"auto, (max-width: 510px) 100vw, 510px\" \/><\/p>\n<p><strong>Italian Veggie Soup<\/strong><\/p>\n<p>olive oil<br \/>\n2 cloves garlic, chopped<br \/>\n1 onion, chopped<br \/>\n1~2 cups sliced carrots<br \/>\n2 stalks celery, chopped<br \/>\n5~6 leaves Napa cabbage leaves, chopped<br \/>\nsalt and pepper<br \/>\n1~2 cups cauliflower, cut into bite sized pieces<br \/>\nwater<br \/>\n2 bay leaves<br \/>\nItalian seasoning herbs<br \/>\n1\/2 cup lentils<br \/>\n1\/2 cup sun-dried tomatoes from a jar (lightly rinse to remove excess oil)<br \/>\n1~2 cup soy milk<br \/>\nsugar<br \/>\nsalt and pepper<br \/>\nLouisiana hot sauce<\/p>\n<p>1. Sautee the vegetables in olive oil. Salt and pepper.<br \/>\n2. Add water to cover the vegetables. Add bay leaves and Italian seasoning herbs. Boil and then turn down to low heat. Continue to cook until the vegetables are cooked through.<br \/>\n3. Add lentils. Cover and continue to cook until lentils are cooked through.<br \/>\n4. In a tall container add sun dried tomatoes and soy milk. Puree the tomatoes using a hand-blender.<br \/>\n5. Add the tomato-milk mixture to the soup.<br \/>\n6.
