{"id":41966,"date":"2016-10-23T00:52:16","date_gmt":"2016-10-23T04:52:16","guid":{"rendered":"http:\/\/www.culinarytribune.com\/?p=41966"},"modified":"2016-10-23T00:52:16","modified_gmt":"2016-10-23T04:52:16","slug":"pumpkin-dorayaki%e3%81%8b%e3%81%bc%e3%81%a1%e3%82%83%e3%83%81%e3%83%bc%e3%82%ba%e3%82%b1%e3%83%bc%e3%82%ad%e3%81%a9%e3%82%89%e7%84%bc%e3%81%8d","status":"publish","type":"post","link":"https:\/\/www.culinarytribune.com\/?p=41966&lang=en","title":{"rendered":"Pumpkin Dorayaki<br>\u304b\u307c\u3061\u3083\u30c1\u30fc\u30ba\u30b1\u30fc\u30ad\u3069\u3089\u713c\u304d"},"content":{"rendered":"<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41967 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/10\/59.jpg\" alt=\"59\" width=\"510\" height=\"717\" \/><\/p>\n<p>You may want to call these pancake sandwiches, because they look like ones.<\/p>\n<p>But I refuse to do so (lol).<\/p>\n<p>They look like pancakes, but these are called &#8220;dorayaki&#8221; in Japan and the cake is sweeter, softer, and it has a unique caramelized top.<\/p>\n<p>I grew up eating dorayaki all the time, but this was my first time to make one.<\/p>\n<p>When I was researching its recipes, I discovered that there are often unusual ingredients used, things not typically seen in the Western pancakes recipes.<\/p>\n<p>Some of those examples are honey and mirin.<\/p>\n<p>These sweetening agents are used in addition to sugar, and I believe they, particularly mirin, create the beautiful caramelization when cooked.<\/p>\n<p>I even found a recipe that called for soy sauce!<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41969 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/10\/52.jpg\" alt=\"52\" width=\"510\" height=\"717\" \/><\/p>\n<p>You can see that the ones in the back are darker.<\/p>\n<p>They are not burned but showing the caramelization. &#8216;<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41970 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/10\/54.jpg\" alt=\"54\" width=\"510\" height=\"717\" \/><\/p>\n<p>Dorayaki is typically two cakes sandwiching sweetened red bean paste.<\/p>\n<p>But I decided to add some seasonal touch, and spiced pumpkin cream cheese was added.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41971 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/10\/57.jpg\" alt=\"57\" width=\"510\" height=\"717\" \/><\/p>\n<p>These were so delicious!<\/p>\n<p>The combination of the chunky sweet red beans and creamy cream cheese was just perfect.<\/p>\n<p>The color balance was pretty nice, too.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-full wp-image-41972 aligncenter\" src=\"https:\/\/www.culinarytribune.com\/wp-content\/uploads\/2016\/10\/60.jpg\" alt=\"60\" width=\"510\" height=\"717\" \/><\/p>\n<p><strong>Pumpkin Dorayaki<\/strong><\/p>\n<p>3 eggs<br \/>\n130g sugar<br \/>\n1 tablespoon honey<br \/>\n1 tablespoon mirin<br \/>\n1 teaspoon baking soda<br \/>\n1 teaspoon baking powder<br \/>\n50cc water<br \/>\n180g all purpose flour<br \/>\n50cc water<br \/>\npumpkin cream cheese<br \/>\n1 package cream cheese<br \/>\n1\/4 can pureed pumpkin<br \/>\n1~2 tablespoon sugar<br \/>\ncinnamon<br \/>\nnutmeg<br \/>\nginger<br \/>\n1.5 cup Japanese sweet red bean paste<\/p>\n<p>1. Mix eggs, sugar, honey, and mirin well.<br \/>\n2. Dissolve baking soda and powder in 50cc water. Add the mixture to 1.<br \/>\n3. Add flour. Mix. Let it rest in the fridge for a half hour.<br \/>\n4. Add 50cc water. Mix well.<br \/>\n5. Cook on a preheated (350F) griddle and make 4-inch diameter pancakes. When they start bubbling, flip them over. Cook for a few more minutes.<br \/>\n6. Make pumpkin cream. Mix all the ingredients well until smooth.<br \/>\n7.
